Influence of ball milling on the production of starch nanoparticles and its effect on structural, thermal and functional properties

The starch nanopartides from water chestnut (WS), lotus stem (LS) and horse chestnut (HS) starch were synthesized using planetary ball milling. The starch nanopartides were investigated by using various techniques like particle size analyser, differential scanning colorimeter (DSC), X-ray diffraction (XRD), scanning electron microscopy (SEM), rheometer, and attenuated total reflectance-Fourier transform infrared spectroscopy (ATR-FTIR). The partide size of horse chestnut starch nanoparticles (HNS), water chestnut starch nanopartides (WNS) and lotus stem starch nanopartides (LNS) was found to be 343,271 & 855 nm with zeta potential of -18.75, -20.45 & -122 my, respectively. SEM revealed small and damaged starch granules. The relative crystallinity was decreased from 13.13 to 6.22. 22.27 to 7.96 and 26.16 to 7.98% in HS, IS and WS starch after ball milling and average crystallite size of starch nanoparticles was found to be 9-12 nm. The starch nanopartides also showed increase in transition temperature and viscosity as analysed by DSC and rheometer, respectively. Significant variations were observed in moisture, protein, fat, ash, carbohydrate content, water absorption capacity, oil absorption capacity, foaming capacity, stability, thermal properties, and pasting characteristics among the different cereal flours. The study also found differences in antioxidant and anti-diabetic potentials among the flours.

Encapsulating probiotics in novel resistant starch wall material for production of rice flour extrudates

Summary: The study found that with the increase of RS4 content, the viscosity properties of the extrudates decreased, while the amylose content, RS content and water intake capacity increased. Adding 20% RS4 microcapsules did not affect the textural parameters of the extrudates, and the thermal transition temperatures increased with the RS4 content.

Development of novel functional snacks containing nano-encapsulated resveratrol with anti-diabetic, anti-obesity and antioxidant properties

Quality assessment and degradative changes of deep-fried oils in street fried food chain of Kashmir, India

Summary: The repetitive use of cooking oil in street food frying poses serious health threats due to the generation of harmful compounds. This study found that the repeated use of cooking oil led to increased levels of saturated and trans fatty acids, and decreased levels of polyunsaturated fatty acids in both the oil and fried street foods. The extent of oil degradation was influenced by the type of food fried, with lipid-based products showing higher degradation levels.

Extraction of polysaccharide from Althea rosea and its physicochemical, anti-diabetic, anti-hypertensive and antioxidant properties

Summary: The valorization of new polymer sources from underutilized plants for food and nutraceutical applications is gaining attention. This study explored the use of mucilage from Althea rosea and revealed its physicochemical properties, in vitro antidiabetic and antihypertensive activity. The results showed that Althea rosea mucilage exhibited functional, hypo-lipidemic, anti-hyperglycemic, antioxidant, and anti-bacterial properties, making it a potential eco-friendly substitute for the food and nutraceutical industry.

Effects of aging and diabetes on the deformation mechanisms and molecular structural characteristics of collagen fibrils under daily activity

An eco-friendly composite hydrogel based on covalently crosslinked cellulose/poly (glycerol citrate) for thallium (І) removal from aqueous solutions

Summary: In this study, a reusable biobased composite hydrogel was successfully synthesized and used for the removal of Tl(I) from aqueous solutions. The hydrogel exhibited high adsorption capacity and thermal stability, and the adsorption process was found to be thermodynamically spontaneous. The results demonstrated that the hydrogel can be reused multiple times without significant loss of its adsorption capacity.

Furthermore, the use of chitosan and dextran sulfate as wall materials in the multi-layer nanoemulsions led to even higher cellular uptake, in vitro bioaccessibility, and antioxidant activity of alpha-tocopherol.

Stabilization of oil-in-water high internal phase emulsions with octenyl succinic acid starch and beeswax oleogel
