Physicochemical and thermomechanical characterization of tara gum edible films: Effect of polyols as plasticizers

The aim of this study was to evaluate tara gum as edible film material as well as the influence of polyols as plasticizers on the properties of the films. Thermomechanical, physicochemical and barrier properties were determined as a function of plasticizer type and concentration. Glycerol, sorbitol and PEG 400 were used in the range of 0.075-0.3 g/tarag. Glycerol was the best plasticizer in terms of mechanical properties with the highest elongation (16-44%) and resistance (45-90 MPa). Sorbitol presented the best barrier properties with the lowest hydrophilicity and water vapour permeability (0.24-0.34 g mm m(-2) h(-1) kpa(-1)). Fourier transform infrared (FTIR) spectroscopy showed no significant effect on the structure of the polysaccharide. Dynamic mechanical analysis (DMA) revealed that incorporation of plasticizers increased the mobility of the polymer chains and reduced the glass transition and melting temperature by 30 and 100 degrees C respectively. Impact of Recombined Milk Systems on Gastrointestinal Fate of Curcumin Nanoemulsion

DNA binding peptide CF-14 enhances bactericidal efficacy of eugenol/ carvacrol nanoparticles to Escherichia coli

Summary: The surface-modified nanoparticles of Eugenol (EU) and carvacrol (CAR), known as EU-CF and CAR-CF NPs, respectively, displayed bactericidal effects on E. coli and bacteriostatic effects on Staphylococcus aureus. Fourier transform infrared spectroscopy (FTIR) analysis revealed significant changes in bacterial carbohydrates, lipids, and DNA. The CF conjugated NPs showed better membrane damage and DNA disintegration in Gram-negative E. coli than in Gram-positive S. aureus. Furthermore, the presence of EU-CF and CAR-CF NPs inhibited the growth of E. coli in orange juice without affecting the flavor compounds.

The impact of differently structured starch gels on the gastrointestinal fate of a curcumin-containing nanoemulsion

Summary: In this study, the impact of curcumin-nanoemulsion-loaded corn starch gels with different amylose contents on the release and bioaccessibility of curcumin during in vitro gastrointestinal digestion was investigated. It was found that the addition of curcumin nanoemulsion significantly increased the storage modulus of waxy and normal corn starch gels, but decreased in high amylose corn starch gels. The disintegration and emptying of the waxy corn starch gel from the stomach was the slowest, while the high amylose and normal corn starch gels showed a higher and faster release of curcumin during intestinal digestion.

In this study, a high-throughput intact N-glycopeptides quantification strategy was developed, allowing the validation of 20 samples per run with an average analysis time of 3 minutes per sample. The strategy was applied in a cohort of 461 serum samples and identified a panel of 10 IgG N-glycopeptides that have strong clinical utility in evaluating the severity of liver disease.
