In this work, an analytical method was proposed for the simultaneous determination of mercury and selenium in fish samples using Atomic Fluorescence Spectrometry (AFS). Multivariate designs were performed to evaluate the variables and optimize the best condition of chemical vapor generation (CVG) and simultaneous determination of mercury and selenium by AFS. Fish samples were prepared via acid digestion in digester block with cold finger reflux system, which ensured that the elements were not lost by volatility. The proposed analytical method was validated, and excellent figures of merit have been achieved, such as detection limits of 0.33 and 9.18 ng g(-1) for mercury and selenium, respectively. The method was applied for simultaneous determination of mercury and selenium in canned sardines. Mercury concentrations ranged from 0.057 to 0.203 mu g g(-1) and selenium concentration from 1.76 to 2.21 mu g g(-1), providing a mean molar ratio (Se:Hg) equivalent to 36.

Summary: This study evaluated the multielement/proximate composition of ten unconventional edible plants from Brazil, revealing their high content of minerals and bioactive compounds, particularly with high levels of elements like iron, magnesium, and phosphorus. Through principal component analysis and hierarchical clustering analysis, it was found that several plants were rich in minerals, while spearmint plant showed high levels of phenolic compounds such as transcinamic acid, kaempferol, and quercetin.

Summary: A method using FTIR was developed to detect tylosin residues in powdered milk, with chemometric analysis and the Boruta algorithm used to predict concentrations. The random forest method showed high accuracy in predicting low concentrations, with the model generated having a high correlation and determination coefficient for tylosin residues in milk. The proposed methodology proved to be efficient for investigating antibiotic residues in powdered milk.

The digestion fates of lipids with different unsaturated levels in people with different age groups

Summary: This study investigates the variations in lipid digestion profiles among individuals of different ages using in vitro digestion models. The findings suggest that adults have a more comprehensive lipid digestion compared to infants, and infants tend to release shorter chain length and more saturated free fatty acids during digestion. Additionally, the particle sizes in the stomach of the elderly were consistently larger. This study enhances our understanding of how lipids with different degrees of unsaturation undergo digestion in diverse age groups.

Fabrication and characterization of chitosan-pectin emulsion-filled hydrogel prepared by cold-set gelation to improve bioaccessibility of lipophilic bioactive compounds

Summary: Chitosan-pectin emulsion-filled hydrogel (EFH) was developed to enhance the bioaccessibility of lipophilic bioactive compounds through intestinal delivery. The EFH, prepared without crosslinking agents, demonstrated improved mechanical strength and compactness with higher pectin concentration. It retained the emulsion at pH 2.0 and released it at pH 7.4, resulting in enhanced release of free fatty acids and improved bioaccessibility of curcumin.

Eight peptides with ACE inhibitory activity were identified from fermented black sesame seed hydrolysates after separation and screening.

Exploration of digestion-resistant immunodominant epitopes in shrimp (Penaeus vannamei) allergens

Effect of milling on in vitro Digestion-Induced release and bioaccessibility of active compounds in rice

Mechanism of aroma enhancement methods in accelerating Congou black tea acidification subjected to room temperature storage

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.
