Summary: This study compares the meat quality of Shaziling and Yorkshire pigs and identifies a potential indicator for superior meat quality in serum. The results show that Shaziling pigs have certain advantages over Yorkshire pigs in terms of backfat thickness, loin eye area, and meat quality. Furthermore, serum L-carnitine content is positively correlated with meat quality.

Summary: This study investigated the molecular mechanisms underlying growth performance and meat quality by analyzing differentially expressed genes between Diannan small ears pigs and Landrace pigs. The results showed that genes related to glycolysis, myogenesis, PPAR signaling pathway, and fatty acid metabolism were differentially expressed between the two breeds, possibly explaining the differences in growth performance and meat quality.

Summary: Determining genetic correlations between replicated phenotypes across breeds or generations is crucial for animal breeding. In this study, we constructed a global eight-breeds crossbreed pig population and evaluated the genetic and phenotypic correlations of muscle fiber characteristics with meat quality traits. The results showed moderate to high genetic correlations between fiber density and various meat quality traits, providing important insights for improving meat quality through genetic regulation of muscle fiber characteristics.

Summary: This study aimed to identify CpG sites associated with DNA methylation levels and meat quality traits in Yorkshire pigs. Genome-wide methylation levels were measured using RRBS, and linear mixed-effect models were used to examine associations. Eight CpG sites were associated with drip loss, two CpG sites with yellowness, and five CpG sites with lightness. No significant associations were found with pH levels or meat redness. This study provides new insights into the epigenetic molecular mechanisms of meat quality traits in pigs.

Summary: In order to promote the development and utilization of Saba pigs, the meat quality traits and glycolysis potential of three different crossbred pigs were compared. The results showed that the meat quality of BDS pigs was the best, indicating that the excellent characteristics of Saba pigs have been fully developed and utilized.

Summary: This study investigated the effects of dietary lycopene supplementation on meat quality, antioxidant capacity, and muscle fiber type transformation in finishing pigs. The results showed that adding 200 mg/kg lycopene to the diet improved the color, nutritional value, and juiciness of pork. It also enhanced the antioxidant capacity and promoted the conversion of muscle fiber types from fast-twitch to slow-twitch.

Integrative analysis revealed a significant negative correlation between DNA methylation levels and gene expression levels. Summary: Muscle fiber characteristics (MFCs) are important for lean meat production and meat quality. This study focused on the heritability and genetic correlation of MFCs and meat quality in biopsied and post-mortem meat samples of Jeju black pigs. The results showed high genetic correlation between biopsied and post-mortem samples, indicating that the MFCs of biopsied samples can predict the MFCs and quality of the meat after slaughter. The biopsy method can be useful for estimating MFCs and meat quality in live pigs.

Summary: This study investigated the effects of supplementing different levels of tea powder in diets on pig growth performance, meat quality, and antioxidant properties. The results showed that supplementation of tea powder did not affect the growth performance of pigs, but improved carcass traits and meat quality. Additional research is needed to further understand the full potential of tea powder as a dietary supplement in animal husbandry.

Summary: The present study evaluated the effect of including different olive cakes in the diet of Bisaro pigs. The results showed that the inclusion of different olive cakes did not have any negative consequences on the carcass, meat, and fat of the pigs. Furthermore, it was found that the inclusion of olive industry by-products in the animal diet could contribute to solving the environmental impact caused by olive-mill wastewaters.
