Characterization of Stevia leaves by LC-QTOF MS/MS analysis of polar and non-polar extracts

Stevia is currently a well-known plant thanks to its sweeting power. Numerous studies that elucidate its composition were exclusively focused on determination of steviol and its glycosides. Untargeted analysis was applied to obtain a profile of main compounds present in extracts from Stevia (Stevia rebaudiana Bertoni) leaves using LC-MS in high resolution mode with a quadrupole-time of flight analyzer. Eighty-nine compounds were tentatively identified and classified into different families: flavonoids; quinic and caffeic acids and derivatives; diterpenoids (including steviol and glycosides); sesquiterpenoids; amino acids and derivatives; fatty amides and derivatives; fatty acids and derivatives; oligosaccharides; glycerolipids; purines; and retinoids. New steviol glycosides were tentatively identified and their possible structures proposed. Other compounds were tentatively identified in Stevia for the first time, such as fatty acid amides. These results reveal the wide range of compounds present in Stevia, which could be responsible for the nutraceutical effects ascribed to their leaves. (C) 2016 Elsevier Ltd. All rights reserved.

Influence of the fatty acid profile on the volatile components of virgin olive oil subjected to thermal stress

Influence of genetic and interannual factors on the fatty acids profile of virgin olive oil

Summary: One of the nutritional benefits of olive oil is its high content of monounsaturated fatty acids (MUFAs). We studied the fatty acids composition of virgin olive oil samples obtained from different cultivars over multiple crop seasons. The cultivars were categorized into two groups based on their MUFAs content. We also found that the fatty acids profile can be influenced by the climate conditions, with reduced precipitation leading to a decrease in MUFAs and an increase in SFAs/PUFAs concentrations.

The digestion fates of lipids with different unsaturated levels in people with different age groups

Fabrication and characterization of chitosan-pectin emulsion-filled hydrogel prepared by cold-set gelation to improve bioaccessibility of lipophilic bioactive compounds

It retained the emulsion at pH 2.0 and released it at pH 7.4, resulting in enhanced release of free fatty acids and improved bioaccessibility of curcumin.

Exploration of digestion-resistant immunodominant epitopes in shrimp (Penaeus vannamei) allergens

Mechanism of aroma enhancement methods in accelerating Congou black tea acidification subjected to room temperature storage

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.
