Summary: In this study, a novel polymer nanoparticle PBM@PDM was synthesized and used as a demulsifier for stable water-in-oil (W/O) or oil-in-water (O/W) emulsions. PBM@PDM could immediately induce coalescence of water droplets and effectively release water in W/O emulsion. It also successfully destabilized O/W emulsion stabilized by asphaltenes.

Summary: Emulsion fuel technology is widely recognized as a potential alternative fuel to improve engine fuel efficiency and reduce pollutant emissions without modifying the engine. Micro-explosion in fuel spray has been identified as the key factor in enhancing fuel combustion efficiency and reducing harmful emissions. However, there have been limited studies on the micro-dynamic processes inside emulsion droplets before micro-explosion occurs during heating. Understanding these micro-dynamic processes is crucial for explaining micro-explosion.

Summary: The effects of asphaltene on hydrate formation were investigated through experimental research, molecular dynamics simulations, and mathematical modeling. It was found that the presence of asphaltene increased the nucleation induction time for hydrate formation. Additionally, asphaltene restrained hydrate formation and decreased total gas consumption. A model incorporating asphaltene was developed to provide a new approach for ensuring flow in deep-water oil and gas fields.

Summary: This study investigates the effect of lipids on emulsion properties and microcapsule formation during complex coacervation. The use of partially hydrolyzed tuna oil stabilized in an O/W emulsion and coacervated with sodium hexametaphosphate resulted in improved complex coacervation yields compared to emulsions containing tuna oil. These findings provide a scientific basis for the design of gelatin O/W emulsions and microencapsulation for the stabilization and delivery of omega-3 fatty acids.

Summary: This study investigated the effect of incorporating alpha-tocopherol into different carriers on the oxidative stability of oil in water emulsion. Results showed that alpha-tocopherol in liposomes and niosomes contributed to lower oxidation products compared to micelles. Additionally, the lipid peroxides remained stable in emulsions without alpha-tocopherol carriers.

Summary: Water-in-oil-in-water double emulsion gels based on black bean protein-sodium alginate Maillard conjugate were successfully fabricated in this study for the encapsulation of insulin and quercetin. The properties and microstructures of the gels were influenced by the type and concentration of the inducers. The addition of each inducer significantly improved the water holding capacity, encapsulation efficiency, and textural properties of the gels.

Summary: In this study, soy peptide solution was successfully encapsulated in a W-1/O/W-2 double emulsion using PGPR as an effective inner emulsifier. The droplet size and encapsulation efficiency of the peptide solution depended on various factors including the ratio and concentration of phases. The freeze-dried microcapsule powder showed higher encapsulation efficiency compared to spray-dried one, indicating the potential of this double emulsion as a delivery matrix for hydrophilic ingredients.
