Ultra-performance liquid chromatographic separation of geometric isomers of carotenoids and antioxidant activities of 20 tomato cultivars and breeding lines

All-trans-lutein, lycopene, beta-carotene and their 22 cis-isomers in 20 tomato breeding were separated and identified by a rapid and sensitive UPLC method using a 1.7 mu m C-18 column and a new gradient mobile phase based on methanol-MTBE-water in 15 min. All-trans-carotenoids were predominant, but 9-cis, 13-cis-lutein, 5-cis, 9-cis, 13-cis, 15-cis, di-cis-lycopene, 9-cis, 13-cis, 15-cis and di-cis-beta-carotene were also found. The cis-isomers were identified using absorption around 330 nm and the Q-ratio. The total antioxidant activities as evaluated by PCL and DPPH assays were found to correlate well with the total carotenoid content, but not with the individual carotenoid or its different isomers. This paper provides an efficient analytical method for obtaining a complete picture of carotenoids in tomatoes. It can be a valuable tool for plant breeders, food processors and researchers in developing designer tomatoes and tomato-products with unique carotenoid compositions, and functional properties. Whole mulberry leaves as a promising functional food: From the alteration of phenolic compounds during spray drying and in vitro digestion

Summary: This study investigated the potential of using spray drying to process whole mulberry leaves into nutraceutical foods rich in phenolic compounds. The results showed that the spray-dried product 6, with a high ratio of whey protein isolate to mulberry leaves solid, had the best physical properties, highest total phenolic compounds level, and highest antioxidant capacity. The in vitro digestion also showed that the bioaccessibility of phenolic compounds in product 6 was significantly higher than that in fresh mulberry leaves.

Effect of Different Dietary Patterns on Macronutrient Composition in Human Breast Milk: A Systematic Review and Meta-Analysis

Summary: The aim of this meta-analysis was to review the relationship between lactation diet and the composition of mature breast milk. 27 cross-sectional studies were included, involving 4355 lactating women. The results showed that fat content in mature milk increased with fat intake, while protein and lactose contents did not increase with their intakes. The rational dietary pattern was recommended, and high-fat and high-protein dietary patterns should be avoided during lactation.

Effects of Endogenous Anti-Oxidative Components from Different Vegetable Oils on Their Oxidative Stability

Identification of OLA1 as a Novel Protein Target of Vitexin to Ameliorate Dextran Sulfate Sodium-Induced Colitis with Tissue Thermal Proteome Profiling

Summary: This study revealed the anti-inflammatory properties of vitexin in a mouse model of colitis and its ability to enhance the expression of barrier-associated proteins. Through thermal proteome profiling and molecular docking, OLA1 was identified as a potential protein target for vitexin. Further experiments demonstrated that OLA1 can increase Nrf2 protein expression, thereby mediating the anti-inflammatory effects of vitexin.

Structural Characterization of Zinc-Sucrose Complex and Its Ability to Promote Zinc Absorption in Caco-2 Monolayer Cells and Mice

Summary: Sucrose is shown to be a stable metal-ion chelating agent that can enhance the absorption of metal ions. This study explores the structure of the zinc-sucrose complex and its ability to promote zinc absorption in cells and mice. The complex increases zinc uptake and transport, upregulates genes and proteins involved in zinc absorption, and interacts with zinc transport proteins. These findings offer valuable insights into the mechanisms of zinc absorption and suggest potential applications in treating zinc deficiency.

Human Milk Oligosaccharides: A Critical Review on Structure, Preparation, Their Potential as a Food Bioactive Component, and Future Perspectives

Summary: Human milk oligosaccharides (HMOs), a unique group of oligosaccharides found in human milk, have gained great interest due to their positive effects on infant health. However, the clinical application of HMOs is challenging due to their specificity to human milk and the associated difficulties and high costs. This article compares oligosaccharides in human and other mammalian milk, summarizes the synthetic strategies for accessing HMOs, reviews the potential use and molecular mechanisms of HMOs in different diseases, and discusses the current challenges and prospects of HMOs in basic research and application.

Effects of Human Milk Fat Substitutes on Lipid Metabolism in First-Weaned Rats

Summary: Although formula-fed infants are more prone to obesity than breastfed ones, this study found that administering human milk fat substitutes (HMFS) did not affect body weight in rats, but significantly decreased body fat content. The study also revealed the potential mechanism by which HMFS affects body fat buildup and promotes lipid metabolism in the liver. These findings underscore the nutritional benefits of HMFS for infants.

Comparative Analysis of Protein Digestion Characteristics in Human, Cow, Goat, Sheep, Mare, and Camel Milk under Simulated Infant Condition

Summary: This study utilized an in vitro infant digestion model to investigate protein digestion characteristics in human and various mammalian milk. The differences in milk digestion were mainly observed in the infant gastric phase, with varying degrees of protein digestion. Proteins in human milk remained partially intact after digestion, while these proteins in animal milk were completely degraded. The peptide spectra of human, mare, and camel milk were highly similar, with the predominant formation of low-intensity small peptides. Sheep milk exhibited the most similar protein digestion behaviors to human milk following infant gastric digestion.

1-Oleate-2-palmitate-3-linoleate glycerol improves lipid metabolism and gut microbiota and decreases the level of pro-inflammatory cytokines

Summary: The most abundant triacylglycerol (TAG) in Chinese human milk is 1-oleate-2-palmitate-3-linoleate (OPL), which is different from other countries where 1,3-oleate-2-palmitate (OPO) is the most abundant TAG. This study investigated the effects of an OPL-supplemented diet on mice's nutritional outcomes and found that high OPL (HOPL) diet improved lipid metabolism and gut bacteria, reducing the level of pro-inflammatory cytokines. Furthermore, the study revealed a relationship between gut bacteria, lipidome profile, and nutritional outcomes.

Summary: This study aimed to investigate the impact of human milk fat substitutes (HMFS) on lipid metabolism in first-weaned Sprague Dawley rats. The findings showed that HMFS administration did not affect body weight but significantly decreased body fat content. Lipidome analysis revealed changes in glycerophospholipid levels in the liver of HMFS-fed rats. Furthermore, HMFS administration promoted lipid metabolism in the rat liver at both the gene and protein levels.

The digestion fates of lipids with different unsaturated levels in people with different age groups

Summary: This study investigates the variations in lipid digestion profiles among individuals of different ages using in vitro digestion models. The findings suggest that adults have a more comprehensive lipid digestion compared to infants, and infants tend to release shorter chain length and more saturated free fatty acids during digestion. Additionally, the particle sizes in the stomach of the elderly were consistently larger. This study enhances our understanding of how lipids with different degrees of unsaturation undergo digestion in diverse age groups.

Fabrication and characterization of chitosan-pectin emulsion-filled hydrogel prepared by cold-set gelation to improve bioaccessibility of lipophilic bioactive compounds

Summary: Chitosan-pectin emulsion-filled hydrogel (EFH) was developed to enhance the bioaccessibility of lipophilic bioactive compounds through intestinal delivery. The EFH, prepared without crosslinking agents, demonstrated improved mechanical strength and compactness with higher pectin concentration. It retained the emulsion at pH 2.0 and released it at pH 7.4, resulting in enhanced release of free fatty acids and improved bioaccessibility of curcumin.

Eight peptides with ACE inhibitory activity were identified from fermented black sesame seed hydrolysates after separation and screening.

Exploration of digestion-resistant immunodominant epitopes in shrimp (Penaeus vannamei) allergens

Mechanism of aroma enhancement methods in accelerating Congou black tea acidification subjected to room temperature storage

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.

Immobilizing amyloglucosidase on inorganic hybrid nanoflowers to prepare time-temperature integrators for chilled pork quality monitoring
