Effect of steam treatment on soluble phenolic content and antioxidant activity of the Chaga mushroom (Inonotus obliquus)

The effect of steam treatment on free phenolic acids in Chaga mushrooms (Inonotus obliquus) was investigated. Untreated and steam-treated (120 degrees C, 3 h) samples of L obliquus were extracted with organic solvents and free phenolic acid-containing fractions were isolated. Free phenolic acids were determined by LC/PDA (liquid chromatography/photodiode array), ESI LC/MS (electrospray ionisation liquid chromatography/mass spectrometry), and GC/MS (gas chromatography/mass spectrometry). After the steam treatment, the soluble phenolic content determined by modified Folin-Ciocalteu method was increased and antioxidant activity was enhanced, as confirmed by a DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging activity assay. The amounts of vanillic acid, protocatechuic acid, syringic acid, and 2,5-dihydroxyterephthalic acid were increased significantly as the result of the steam treatment, suggesting that the liberation of low molecular weight free phenolics was enhanced by the steaming process. Consequently, the radical scavenging activity was also significantly enhanced by free phenolics produced using this method. (C) 2009 Elsevier Ltd. All rights reserved.

Preparation and characterization of various chitin-glucan complexes derived from white button mushroom using a deep eutectic solvent-based ecofriendly method

Summary: In this study, various chitin-glucan complexes (CGCs) were prepared from white button mushroom using deep eutectic solvents (DESs) and compared for their properties. The results showed that CGCs prepared using DESs containing betaine and urea had higher yields, lower protein and mineral contents, lower crystallinity, and more porous surfaces compared to other CGCs. This DES-based method shows potential for preparing advanced biomaterials from mushrooms under mild and ecofriendly conditions.

Summary: This study systematically investigated the effect of deep eutectic solvents (DESs) on the stability, structure, and activity of proteins using lysozyme as a model. The results showed that DESs can improve the thermal stability and alpha-helical content of lysozyme, indicating a protective effect. The impact of DESs on lysozyme varies with different concentrations, and DESs with polyol as the hydrogen bond donor exhibit better stability and preservation of the native structure compared to those with sugar as the donor.

Ecofriendly and enhanced biogenic synthesis of silver nanoparticles using deep eutectic solvent-based green tea extracts

Summary: According to the principles of green chemistry, metallic nanoparticles can be synthesized using plant extracts. In this study, deep eutectic solvents (DESs) were used to prepare green tea extracts (GTEs) instead of water, resulting in higher synthesis efficiency and improved properties of silver nanoparticles. Among the DESs, the mixture of glycerol and betaine produced silver nanoparticles with uniform size and crystallinity. Additionally, adding DESs to GTEs enhanced the dispersion of silver nanoparticles.

A solvent-free headspace GC/MS method for sensitive screening of N-nitrosodimethylamine in drug products

Summary: A solvent-free headspace gas chromatography-mass spectrometry (SF-HS-GC/MS) method was developed and validated for screening N-nitrosodimethylamine (NDMA) in various active pharmaceutical ingredients (APIs) and drug products. Experimental parameters such as incubation temperature, incubation time, and sample volume in solvent-free headspace conditions were optimized. The method showed excellent linearity, precision, and accuracy, with no significant matrix effect observed in drug products.

The digestion fates of lipids with different unsaturated levels in people with different age groups

Summary: This study investigates the variations in lipid digestion profiles among individuals of different ages using in vitro digestion models. The findings suggest that adults have a more comprehensive lipid digestion compared to infants, and infants tend to release shorter chain length and more saturated free fatty acids during digestion. Additionally, the particle sizes in the stomach of the elderly were consistently larger. This study enhances our understanding of how lipids with different degrees of unsaturation undergo digestion in diverse age groups.

Summary: Chitosan-pectin emulsion-filled hydrogel (EFH) was developed to enhance the bioaccessibility of lipophilic bioactive compounds through intestinal delivery. The EFH, prepared without crosslinking agents, demonstrated improved mechanical strength and compactness with higher pectin concentration. It retained the emulsion at pH 2.0 and released it at pH 7.4, resulting in enhanced release of free fatty acids and improved bioaccessibility of curcumin.

Mechanism of aroma enhancement methods in accelerating Congou black tea acidification subjected to room temperature storage

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.
