One-pot depolymerizative extraction of proanthocyanidins from mangosteen pericarps

Reaction of dried mangosteen pericarps powders with mercaptoacetic acid in the presence of hydrochloric acid in methanol afforded 4 beta-(carboxymethyl)sulphanyl-(-)-epicatechin methyl ester, 1. in 4.5% yield. The structure of 1 was characterised by H-1, C-13 NMR, and mass spectra. Two protons on the prochiral methylene carbon next to sulphur atom give rise to characteristic AB pattern peaks indicating its association to chiral environment as is the case in 1. Compound 1 is a potential synthon towards other epicatechin derivatives due to its labile C-S bond under weakly basic conditions. Reaction 1 with epicatechin gave B2. If 3,5-dimethoxyaniline was used, 4 beta-(2'-amino-4',6'-dimethoxyphenyl)epicatechin, 2, was isolated in moderate yield. Reaction of I with mercaptoethanol leads to synthesis of 4 beta-(2-hydroxyethylthio)epicatechin, 3, in good yield. Finally mercaptoacetic acid was used as an alternative for successful determination of mean degree of polymerisation of PAs isolated from pine bark, grape seeds, cocoa bean, and mangosteen. Interrelation of cholesterol-lowering, antioxidant activity and DNA damage protection to the different solvent extracts of mulberry (Morus alba L.)

Summary: The relationship between the cholesterol-lowering, antioxidant, and DNA damage protection activities of different solvent extracts from Morus alba L. were studied. It was found that the polyphenol and flavonoid contents in the extracts were positively correlated with these biological activities. The extracts have potential as natural sources of anti-hypercholesterolemia, antioxidants, and DNA damage protection, with the potential use in functional food and health products.

Characterization and in vitro digestion properties of cassava starch and epigallocatechin-3-gallate (EGCG) blend

Enzymatic treatment, unfermented and fermented fruit-based products: current state of knowledge

Summary: Food manufacturers are increasingly using enzymes to improve yield and product quality in fruit-based products. Enzymatic hydrolysis treatment helps achieve viscosity reduction, clarification, better nutritional quality, and enhanced sensory characteristics. Non-Saccharomyces yeasts are being employed to produce complex flavor profiles in fermented fruit-based products. Fermented probiotic fruit juice is also discussed as an alternative to dairy-based probiotic products.

Facile mitochondria localized fluorescent probe for viscosity detection in living cells

Summary: A new fluorescent probe BV-1 based on BODIPY group was synthesized and demonstrated to detect viscosity in living cells with high selectivity and sensitivity. The probe showed significant enhancement in fluorescence with redshift in emission wavelength under high viscosity conditions, providing efficient ways for the development of viscosity probes and monitoring of intracellular viscosity properties and functions.

Tea polyphenols-OSA starch interaction and its impact on interface properties and oxidative stability of O/W emulsion

Summary: In this study, OS-TPs complexes were prepared and their effects on the physical and oxidative stability of oil-water emulsion were investigated. The study showed that the OS-TPs complex effectively reduced the interfacial tension and improved the emulsifying ability of OSA starch. The complex also exhibited higher oxidative stability and a more stable structure compared to a simple mixture of tea polyphenols and OSA starch emulsion.

The Effect of Co-Fermentation with Lactobacillus plantarum HLJ29L2 and Yeast on Wheat Protein Characteristics in Sourdough and Crackers

Summary: This study investigated the effect of co-fermentation with lactic acid bacteria and yeast on the wheat protein digestibility of crackers and explored the mechanism of protein changes during fermentation. Co-fermentation significantly improved the protein digestibility of crackers and increased the content of free amino acids. It also had a significant effect on the sourdough during fermentation. These findings provide an important theoretical basis for the application of lactic acid bacteria and yeast co-fermentation in crackers.

Antioxidant Activities of Dihydromyricetin Derivatives with Different Acyl Donor Chain Lengths Synthetized by Lipozyme TL IM

Summary: In this study, the liposolubility of dihydromyricetin (DHM) was improved by acylating it with different fatty acid vinyl esters, resulting in the synthesis of five DHM acylated derivatives with different carbon chain lengths and lipophilicity. The relationship between the lipophilicity and antioxidant activities of DHM and its derivatives was evaluated using oil and emulsion models. The results showed that DHM derivatives with different lipophilicity exhibited various antioxidant activities in different antioxidant models.

The digestion fates of lipids with different unsaturated levels in people with different age groups

Summary: This study investigates the variations in lipid digestion profiles among individuals of different ages using in vitro digestion models. The findings suggest that adults have a more comprehensive lipid digestion compared to infants, and infants tend to release shorter chain length and more saturated free fatty acids during digestion. Additionally, the particle sizes in the stomach of the elderly were consistently larger. This study enhances our understanding of how lipids with different degrees of unsaturation undergo digestion in diverse age groups.

Fabrication and characterization of chitosan-pectin emulsion-filled hydrogel prepared by cold-set gelation to improve bioaccessibility of lipophilic bioactive compounds

Summary: Chitosan-pectin emulsion-filled hydrogel (EFH) was developed to enhance the bioaccessibility of lipophilic bioactive compounds through intestinal delivery. The EFH, prepared without crosslinking agents, demonstrated improved mechanical strength and compactness with higher pectin concentration. It retained the emulsion at pH 2.0 and released it at pH 7.4, resulting in enhanced release of free fatty acids and improved bioaccessibility of curcumin.

Eight peptides with ACE inhibitory activity were identified from fermented black sesame seed hydrolysates after separation and screening.

Exploration of digestion-resistant immunodominant epitopes in shrimp (Penaeus vannamei) allergens

Mechanism of aroma enhancement methods in accelerating Congou black tea acidification subjected to room temperature storage

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.

Immobilizing amyloglucosidase on inorganic hybrid nanoflowers to prepare time-temperature integrators for chilled pork quality monitoring
