Orthonasal or retronasal presentation of odorants evokes different responses. To study this phenomenon in depth, a stimulation technique has been developed that allows ortho- or retronasal presentation of chemosensory stimuli, the release of which is precisely controlled. Based on this technique studies have been conducted using psychophysical, electrophysiological, and imaging techniques. In conjunction with clinical data the results clearly suggest that there are differences in the perception of ortho- and retronasal stimuli. The basis for this phenomenon may be found in ideas by Mozell and colleagues with regard to odorant absorption across the mucosa which may determine activation of the olfactory epithelium. Summary: The study aimed to investigate the differences in quality of life among patients with olfactory dysfunction of different origin. Results showed that patients with post-infectious and post-traumatic OD had poorer olfactory-related QOL. Olfactory-related QOL was positively associated with olfactory function, disease duration, age, and negatively associated with being female.

Summary: The frequent association between COVID-19 and olfactory dysfunction is leading to a demand for treatment, with systemic corticosteroids considered as an option. However, caution is advised due to weak evidence supporting their effectiveness, high rate of spontaneous recovery, and potential adverse effects. Instead, smell training, which has strong evidence and no known side effects, should be considered initially.

Taste Alteration in External Auditory Canal Cholesteatoma: Indicator of Impending N VII Affection

Summary: This study retrospectively analyzed the symptoms, signs, and radiological and intraoperative descriptions of chorda tympani nerve (CTN) involvement in 73 patients with external auditory canal cholesteatoma (EACC). The results showed that 10 out of 73 patients experienced subjective dysfunction, and 8 had abnormal taste test results. The discussion and conclusion suggest that CTN dysfunction often develops asymptomatically in chronic ears, but up to one out of 10 EACC patients with advanced disease may experience regional gustatory dysfunction prior to surgery.

Apparently Minor Head Trauma Can Lead to Anosmia: A Case Report

Summary: The case study involves a 49-year-old female patient who experienced anosmia after a mild head trauma. MRI scans revealed lesions/bleeding in the right frontal lobe and olfactory region. This highlights the importance of conducting MRI scans in cases of apparent mild head trauma with anosmia to detect potential brain damage and raises questions about assessing the severity of head trauma.

The digestion fates of lipids with different unsaturated levels in people with different age groups

Summary: This study investigates the variations in lipid digestion profiles among individuals of different ages using in vitro digestion models. The findings suggest that adults have a more comprehensive lipid digestion compared to infants, and infants tend to release shorter chain length and more saturated free fatty acids during digestion. Additionally, the particle sizes in the stomach of the elderly were consistently larger. This study enhances our understanding of how lipids with different degrees of unsaturation undergo digestion in diverse age groups.

Fabrication and characterization of chitosan-pectin emulsion-filled hydrogel prepared by cold-set gelation to improve bioaccessibility of lipophilic bioactive compounds

Summary: Chitosan-pectin emulsion-filled hydrogel (EFH) was developed to enhance the bioaccessibility of lipophilic bioactive compounds through intestinal delivery. The EFH, prepared without crosslinking agents, demonstrated improved mechanical strength and compactness with higher pectin concentration. It retained the emulsion at pH 2.0 and released it at pH 7.4, resulting in enhanced release of free fatty acids and improved bioaccessibility of curcumin.

Identification and comparison of milk fat globule membrane and whey proteins from Selle Français, Welsh pony, and Tieling Draft horse mare's milk

Eight peptides with ACE inhibitory activity were identified from fermented black sesame seed hydrolysates after separation and screening.

Exploration of digestion-resistant immunodominant epitopes in shrimp (Penaeus vannamei) allergens

Mechanism of aroma enhancement methods in accelerating Congou black tea acidification subjected to room temperature storage

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.

Immobilizing amyloglucosidase on inorganic hybrid nanoflowers to prepare time-temperature integrators for chilled pork quality monitoring
