Summary: The relationship between interfacial behavior and emulsion stability of coconut globulin (CG) at different pH levels was investigated to understand its emulsification mechanism. The dynamic interfacial tension of CG was lowest at pH 11, followed by pH 9, 3, 7, and 5. CG showed the best interfacial adsorption at pH 5 but desorption at pH 11. Heating resulted in decreased adsorption for all pH groups. The dilatational elasticity modulus (Ed) of CG was highest at pH 5, followed by pH 3, 7, 9, and 11, but significantly decreased after heating.

Summary: The study aimed to develop a vegan fermented beverage with water-soluble plant-based extracts, focusing on the influence of inulin and xanthan gum concentrations on kefir grains growth, fermented beverage yield, and lactic acid content. The results showed that inulin and xanthan gum concentrations significantly affected the growth of kefir grains, as well as the yield and lactic acid content of the fermented beverage.

Summary: Coconut husk fibers were found to contain 3% of proanthocyanidins, with a high B-type procyanidin content. Extracts from the husk fibers showed promising results as eco-friendly corrosion inhibitors for carbon steel AISI 1020 under neutral pH conditions, with the highest protective efficiency at a concentration of 1.2 g L-1. This study provides valuable insights into the industrial potential of coconut husk fibers.

Summary: The research found that deamidation mediated by heat and HCl can significantly improve the solubility, foaming capacity, and emulsifying activity of coconut protein, but the emulsion stability decreases after acidification. Through testing, it was found that deamidated coconut protein treated with 0.3 mol/L HCl at 75 degrees Celsius showed the highest solubility and enhanced foam and emulsion ability.

Summary: This study investigated the response mechanism of coconuts to low temperature stress using growth morphology and physiological analyses, transcriptome and metabolome analysis. The results showed that low temperature treatment inhibited the growth of coconut seedlings and caused changes in various biochemical parameters and hormone levels. Transcriptome analysis revealed a large number of differentially expressed genes related to signal transduction, metabolism, and transcription factors. Metabolome analysis identified significant changes in the accumulation of various metabolites under low temperature. This study provides important insights into the molecular mechanisms underlying the response of coconuts to cold stress.

Summary: This study aimed to identify and analyze the members of the potato GATA gene family to provide insights into their regulatory roles in potato growth, development, and stress responses. The analysis identified forty-nine GATA proteins in Solanum tuberosum, which were categorized into 5 subfamilies. Experimental findings demonstrated widespread expression of StGATA proteins in various tissues during different developmental stages, with StGATA9 showing induction by Ralstonia solanacearum, ABA, and MJ treatment. Additionally, tissue localization revealed that StGATA9 was predominantly expressed in the phloem of leaf vascular bundles and stem vascular system in potatoes.
