Impact of Protein Content on the Antioxidants, Anti-Inflammatory Properties and Glycemic Index of Wheat and Wheat Bran

Summary: Conventional wheat milling produces a significant amount of wheat bran, which is rich in polyphenols and insoluble fiber with potential health benefits. This study evaluated the impact of protein content on the antioxidant, anti-inflammatory, and glycemic properties of wheat bran. The findings demonstrated that protein content significantly influenced these properties, and segregation of wheat bran based on protein content could enhance the efficiency of valorization processes.

Bioactivity and Digestibility of Microalgae Tetraselmis sp. and Nannochloropsis sp. as Basis of Their Potential as Novel Functional Foods

Summary: It is estimated that the world's population will exceed 10 billion people by 2050, leading to a decline in global food security. To address this issue, the FAO and WHO have recommended dietary changes to reduce animal calorie intake and increase the consumption of sustainable and nutrient-rich products. Microalgae, such as Tetraselmis and Nannochloropsis, have gained attention as potential sources of functional foods due to their high-value compounds with potential health benefits. However, their use is limited by challenges related to species diversity, cultivation factors, extraction procedures, and limited evidence on safety and bioavailability of microalgae bioactives.

Plant proteins derived from grains and seeds offer nutritionally balanced diets, improved health, poverty reduction, enhanced food security, and various bioactive peptides with health benefits.

Evaluation of the Multifunctionality of Soybean Proteins and Peptides in Immune Cell Models

Summary: Soybean peptides, such as lunasin, have shown potential antioxidant and immunomodulatory activity. Lunasin-enriched soybean extract (LES) exhibited radical scavenging capacity and immunostimulatory effects on macrophages and lymphocytes. The resistance of lunasin and other peptides to digestive enzymes may contribute to the beneficial effects of LES.

Isolation and Characterization of Protein Fractions for Valorization of Sacha Inchi Oil Press-Cake

Summary: This study investigated three different extraction procedures for obtaining protein fractions from Sacha Inchi oil press-cake. The extraction at pH 11.0 without salt addition produced the highest values of protein content and extraction yield. The protein fractions displayed excellent oil absorption capacity and interesting foam activity, with the albumin fractions having significantly higher solubility and emulsifying activity.

Contribution of Proteins and Peptides to the Impact of a Soy Protein Isolate on Oxidative Stress and Inflammation-Associated Biomarkers in an Innate Immune Cell Model

Summary: The innate and adaptive immune systems play a role in regulating inflammatory and oxidative processes, which can lead to chronic diseases. Bioactive compounds in food, such as soybean proteins and peptides like lunasin, have potential in preventing these diseases. This study aimed to extract and characterize a soluble protein-enriched extract from soybean and evaluate its antioxidant and immunomodulatory properties. The extract contained 535 proteins, including lunasin, and the 3-10 kDa fraction showed the highest enrichment of lunasin. The extract and its fractions showed antioxidant effects and activated macrophages, with the 3-10 kDa fraction counteracting the increase in nitric oxide induced by lipopolysaccharide (LPS). These findings suggest that soybean protein could be used in functional foods and nutraceuticals to promote health and prevent oxidative stress and immune-alteration-associated diseases.

However, some studies indicate limitations in sensory acceptance.

Effects of Dietary Supplementation with a Ferulic Acid-Rich Bioactive Component of Wheat Bran in a Murine Model of Graft-Versus-Host Disease

Summary: The study evaluated the effects of a bioactive ingredient derived from wheat bran, which contains ferulic acid, in a mouse model of graft-versus-host disease (GvHD). The results showed that the ingredient had some local effect in reducing inflammatory response in the skin and small intestine, but the dose used may not be sufficient to control or reduce systemic inflammation. Further experiments and technological strategies are needed to improve the efficacy of the ingredient in this setting.

Temporal changes in salivary composition induced by oral exposure to different wine matrices and the relationship with the behaviour of aroma compounds in the mouth

Summary: This study investigated the dynamic changes in saliva flow and composition after exposure to aromatized wine matrices with different chemical compositions. The results showed that the saliva composition varied depending on the wine matrix, with ethanol-containing wines resulting in lower in-mouth aroma retention. Salivary TPI and, to a lesser extent, SAOX were positively correlated with the aroma retained.
