The interactions of fish gelatine (FG) with hyaluronic acid (HA) are studied in an aqueous environment at 25 degrees C by turbidimetric titration, confocal scanning laser microscopy, dynamic light scattering, zeta potentiometry, spectrophotometry with methylene blue, and construction of state diagrams. FG forms soluble complexes with HA above a boundary pH (pH(phi 1)), where both biopolymers are net-negatively charged, but develop insoluble complexes as liquid-state complex coacervates below pH(phi 1) where the two biopolymers are oppositely charged. The insoluble complexes are continuously aggregated with further acid titration, followed by immediate visible phase-separation when another boundary pH (pHp) is reached. The complex formation is mainly driven by electrostatic attractions rather than hydrogen bonding or hydrophobic interactions. The complex formation is promoted by increasing FG-to-HA weight ratio or total biopolymer concentration, or at a low ionic strength, but significantly suppressed in the presence of high ionic strength. Delineating the interaction mechanism of glabridin and ovalbumin by spectroscopic and molecular docking techniques

Summary: The interaction between ovalbumin (OVA) and isoflavonoid glabridin (GB) was studied through spectroscopic and molecular docking techniques. GB was found to bind to OVA mainly through hydrogen bonding and hydrophobic forces, leading to changes in OVA's secondary structure. Molecular docking simulations supported the experimental findings. Additionally, the GB-OVA complex increased the aqueous solubility of GB.

Egg-Curry: Insights into the Interaction Between Curcumin and Ovalbumin Using Spectroscopic Analyses and Protein-Ligand Docking Simulations

Summary: This study investigated the interaction between curcumin and ovalbumin, revealing a stable complex formation with maintained physicochemical properties of curcumin. Fabrication of zein and j-carrageenan colloidal particles for encapsulation of quercetin: In-vitro digestibility and bio-potential activities

Summary: The present work focuses on the preparation and stabilization of quercetin-loaded zein colloidal nanoparticles using κ-carrageenan as a stabilizer. The newly prepared zein-KC complex colloidal particles loaded with quercetin showed spherical shapes, small particle sizes, high negative zeta potential, and good encapsulation efficiency. The interactions among zein, quercetin, and κ-carrageenan were confirmed, and the KC-coated zein colloidal particles exhibited improved physicochemical properties and antioxidant activity of the encapsulated quercetin.

Unraveling the phase behavior of cricket protein isolate and alginate in aqueous solution

Summary: In this study, the associative phase behavior of cricket protein isolate (CPI) and sodium alginate (AL) in aqueous solutions was investigated. The formation of soluble or insoluble complexes between the two biopolymers was found to be influenced by factors such as pH, biopolymer ratio, total biopolymer concentration, and ionic strength. Ionic interactions were identified as the main driving force for the formation of insoluble complexes, while hydrogen bonding and hydrophobic interactions also played significant roles.

Molecular characterization of capsaicin binding interactions with ovalbumin and casein

Summary: This study investigated the interaction between capsaicin and ovalbumin (OVA) and casein (CAS) at pH 7.4, and explored the potential of using these food proteins as carriers for capsaicin. The findings showed that capsaicin could bind with OVA/CAS, leading to increased fluorescence intensity and specific protein conformational changes. The results also demonstrated a high encapsulation efficiency of capsaicin with OVA/CAS, enhancing their antioxidant activity synergistically.

Chitosan-Alginate Polymeric Nanocomposites as a Potential Oral Vaccine Carrier Against Influenza Virus Infection

Summary: Lessons from the recent COVID-19 pandemic highlight the importance of rapidly developing and administering an effective vaccine. In this study, a chitosan-alginate complex carrier system was designed to encapsulate an inactivated influenza virus vaccine and evaluated for oral administration in mice. The nanocomposite vaccines demonstrated successful delivery of the vaccine, induction of virus-specific antibodies, and enhanced T-cell responses. These results suggest that chitosan-alginate polymeric nanocomposites hold promise as delivery systems for oral influenza vaccines.

Physicochemical and functional properties of capsaicin loaded cricket protein isolate and alginate complexes

Summary: As people's awareness of the health benefits of foods and their nutritional benefits for preventing diseases and promoting health increases, the demand for functional foods rich in proteins, fiber, and bioactives like capsaicin (CAP) is constantly rising. This study demonstrated that the electrostatic complexes developed by cricket protein isolate (CPI) and alginate (AL) can effectively encapsulate CAP, improving its solubility and protecting it at acidic pHs. The findings contribute to the growing body of knowledge that validates protein-polysaccharide complexation as a promising strategy for developing edible delivery systems.

Summary: The potential of multi-layer nanoemulsions for improving the cellular uptake, antioxidant activity, and in vitro bioaccessibility of alpha-tocopherol was examined. The results showed that the multi-layer nanoemulsions significantly enhanced the cellular uptake and antioxidant activity of alpha-tocopherol compared to free coumarin 6. Furthermore, the use of chitosan and dextran sulfate as wall materials in the multi-layer nanoemulsions led to even higher cellular uptake, in vitro bioaccessibility, and antioxidant activity of alpha-tocopherol.
