Food additives are natural or synthetic substances that can be added to foodstuff in small amounts to perform technological functions, namely colour, sweetness or to extend shelf life. In the European Union an E number identifies all food additives. According to the technological functions twenty-five categories of food additives have been defined. Preservatives, also known as antimicrobial agents, are food additives used to extend the shelf life of food by shielding them against deterioration caused by microorganisms. There are forty five substances used as preservatives, being their applications and purity regulated in the European Union. Although some of these substances are harmless when used in small quantities (e.g., the authorized amounts), the use of others are not without risks to human health. Among large amounts of side effects, skin rashes and itching, breathing difficulty, sneezing or gastrointestinal upsets can be found. This work is a synoptical review of food additives used as preservatives (antimicrobial agents) authorized in the European Union, considering its characteristics, uses and side effects.

Summary: This study evaluated the application of magnesium in tomato fruits and found that foliar application of high concentrations of MgSO4 had little impact on fruit quality and physiology. There were differences in magnesium accumulation patterns between two tomato varieties, but on average, H1534 had higher magnesium content. This study suggests using specific varieties to enhance the added value of tomato fruits and emphasizes the importance of variety choice in designing enrichment workflows.

Summary: Calcium is essential for plants, and this study investigates the accumulation and deposition of calcium in tuber tissues, as well as its interaction with other essential nutrients. The results show that foliar sprayings of calcium chloride and calcium nitrate fertilizers can increase calcium accumulation in tubers, without significant impact on photosynthetic functions or tuber size. Furthermore, the accumulation patterns of other nutrients in tubers show distinct differences compared to calcium.

Sodium alginate/polycaprolactone co-axial wet-spun microfibers modified with N-carboxymethyl chitosan and the peptide AAPV for Staphylococcus aureus and human neutrophil elastase inhibition in potential chronic wound scenarios

Catarina S. Miranda, A. Francisca G. Silva, Catarina L. Seabra, Salette Reis, M. Manuela P. Silva, Silvia M. M. A. Pereira-Lima, Susana P. G. Costa, Helena P. Felgueiras, Natalia C. Homem

Summary: In chronic wound (CW) scenarios, Staphylococcus aureus-induced infections are very prevalent. This leads to abnormal inflammatory processes, in which proteolytic enzymes, such as human neutrophil elastase (HNE), become highly expressed. A co-axial drug delivery system was developed to incorporate the antimicrobial peptide AAPV, which can suppress HNE activity, and release it controlled by N-carboxymethyl chitosan (NCMC), an antimicrobial polymer effective against Staphylococcus aureus.
