Effect of roasting and microwave pre-treatments of Nigella sativa L. seeds on lipase activity and the quality of the oil

The present research studied the thermal pre-treatment of non-soaked and soaked black seed (BS) by microwave radiation (1-3.5 min) in comparison with conventional roasting (2-8 min, 180 degrees C). As BS was treated for a longer time, a significant increase (p < 0.05) was observed in total chlorophylls, carotenoids and phenolic contents in the extracted oils. The oils obtained from the soaked seeds (to 8%) had significantly higher oil quality properties. The optimum extraction conditions were: irradiation time of 3.5 min and BS moisture content of 8%, which resulted in an extraction yield of 35.76%, 10643.730 caffeic acid equivalents/100 g, PV of 9.63 meq O-2/kg and 18.88 h of Rancimat oxidative stability. The microwave pre-treatment was more effective than conventional roasting in reducing lipase activity. Based on the results obtained, it was advisable to treat BS with microwaves and soak them before extracting the oil in a cold press at room temperature.

Summary: This study evaluated the effects of rosmarinic acid and thymoquinone on tumor growth inhibition and apoptotic induction of docetaxel in MDA-MB231 breast cancer cells. The results showed that the combination of rosmarinic acid and thymoquinone with docetaxel significantly enhanced the anti-proliferative and apoptosis-inducing effects of docetaxel, through the inhibition of the NF-kappa B pathway and modulation of apoptotic gene expression.

Changes in physicochemical properties of cold press extracted oil from Balangu (Lallemantia peltata) seeds during storage

Summary: This research studied the effect of seed moisture content on the oil yield and quality of Balangu oil. The results showed that the optimal moisture content was 7.5%, which resulted in the highest oil yield. During storage, the physicochemical characteristics of the oil changed, with some components increasing and others decreasing. Overall, Balangu oil is an excellent source of edible vegetable oil.

Can water limitation and seed pretreatment change leaves and inflorescences secondary metabolites and fatty acid composition of grain oil in borage (Borago officinalis L.)?

Summary: Two field experiments were conducted to investigate the effects of irrigation intervals and seed pretreatments on secondary metabolites of borage. The results showed that moderate and severe water limitations enhanced the saponin, tannin, and mucilage contents of borage leaves, while seed pretreatment with KNO3 and KH2PO4 increased the saponin content. Severe water deficit also led to a reduction in grain yield and oil yield of borage.

Effects of Mild Thermal Processing and Storage Conditions on the Quality Attributes and Shelf Life of Truffles (Terfezia claveryi)

Summary: This study investigated the effects of two mild thermal processing (MTP) methods on some physicochemical properties of truffles. The results showed that 5% vinegar treatment with 63℃ MTP was effective in reducing weight loss, microbial spoilage, and increasing firmness of truffles during storage. However, it led to a decrease in phenolic compounds and ascorbic acid content. Both MTPs inhibited microbial load, with the 63℃, 3 min MTP being the most effective.

Effect of co-extraction of pomegranate seed oil with green tea leaves on the extraction yield and quality of extracted oil

The digestion fates of lipids with different unsaturated levels in people with different age groups

Summary: This study investigates the variations in lipid digestion profiles among individuals of different ages using in vitro digestion models. The findings suggest that adults have a more comprehensive lipid digestion compared to infants, and infants tend to release shorter chain length and more saturated free fatty acids during digestion. Additionally, the particle sizes in the stomach of the elderly were consistently larger. This study enhances our understanding of how lipids with different degrees of unsaturation undergo digestion in diverse age groups.

Fabrication and characterization of chitosan-pectin emulsion-filled hydrogel prepared by cold-set gelation to improve bioaccessibility of lipophilic bioactive compounds

Summary: Chitosan-pectin emulsion-filled hydrogel (EFH) was developed to enhance the bioaccessibility of lipophilic bioactive compounds through intestinal delivery. The EFH, prepared without crosslinking agents, demonstrated improved mechanical strength and compactness with higher pectin concentration. It retained the emulsion at pH 2.0 and released it at pH 7.4, resulting in enhanced release of free fatty acids and improved bioaccessibility of curcumin.

Mechanism of aroma enhancement methods in accelerating Congou black tea acidification subjected to room temperature storage

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.
