Bamboo-shaving polysaccharide protects against high-diet induced obesity and modulates the gut microbiota of mice

Increasing evidence has shown that gut microbiota plays a critical role in regulating pathogenesis of low-grade inflammation and obesity. Bamboo-shaving polysaccharide (BSP, purity: 80-85%, Mw = 10,000 g/mol) is well known for its immunomodulatory capacity. However, no study has previously investigated the anti-obesity activity of BSP. After high fat diet-fed mice were treated with BSP for 8 weeks, we showed that BSP not only improved community richness and diversity of gut microbiota, but also regulated the composition of gut microbiota. Specifically, mice treated with BSP showed lower ratio of Firmicutes/Bacteroidetes, lower relative abundance of harmful bacteria (Enterobacter and Desulfovibrio) and higher relative abundance of beneficial bacteria (Akkermansia muciniphila and Lactobacillus). Moreover, BSP meliorated intestinal barrier integrity, reduced low-grade inflammation, improved lipid metabolism and ameliorated insulin resistance in obese mice. Our results indicated that BSP could be exploited as prebiotic to protect against obesity and insulin resistance in obese individuals.

Summary: In this study, glycosylated lactoferrin was successfully used to establish stable zein/glycosylated lactoferrin nanoparticles for encapsulating 7,8-dihydroxyflavone. The encapsulated 7,8-dihydroxyflavone exhibited an amorphous state inside the nanoparticles and showed good water redispersibility and bioaccessibility. This research provides a theoretical reference for the application of zein-based delivery systems.

Structural characterization of a novel marine polysaccharide from mussel and its antioxidant activity in RAW264.7 cells induced by H2O2

Summary: A new water-soluble polysaccharide was extracted and purified from mussels, and its structure and cellular antioxidant levels were studied. The polysaccharide was mainly composed of glucose and showed characteristic polysaccharide bands. Moreover, it was found that the polysaccharide could protect cells from oxidative stress by increasing antioxidant enzyme activities and reducing oxidative damage markers.

Recent progress in fish oil-based emulsions by various food-grade stabilizers: Fabrication strategy, interfacial stability mechanism and potential application

This review focuses on the strategies, stabilization mechanisms, and applications of fish oil emulsions, as well as the role of stabilizers in their stability. Synergistic effect of microfluidization and transglutaminase cross-linking on the structural and oil-water interface functional properties of whey protein concentrate for improving the thermal stability of nanoemulsions

Summary: In this study, dynamic high-pressure microfluidization technology combined with TGase cross-linking was used to prepare DHPM-TG-WPC, and the thermal stabilization mechanism of nano-emulsions prepared with DHPM-TG-WPC was explored. Results showed that DHPM treatment could promote the formation of TG-crosslinked WPC polymers and improve the stability of nanoemulsions.

Insight into transglutaminase cross-linking induced gel strength and thermal stability improving of gelatin-based emulsion-filled gels

Summary: In this study, gelatin-based emulsion-filled gels (EFGs) with high thermal stability and gel strength were prepared by cross-linking with transglutaminase (TG). The impact of varying cross-linking time on the thermal stability and gel strength of EFGs was explored. The results showed that enzymatic cross-linking increased gel strength and thermal denaturation temperature, and affected the structural changes of EFGs.

Dietary Protective Potential of Fucoxanthin as an Active Food Component on Neurological Disorders

Summary: Fucoxanthin has preventive and therapeutic effects on neurological disorders by acting on multiple targets, such as regulating apoptosis, reducing oxidative stress, activating autophagy pathway, inhibiting protein aggregation, improving dopamine secretion, attenuating neuroinflammation, etc. Further research is needed to explore the metabolism and transport of fucoxanthin through the gut-brain process. Dietary supplementation of fucoxanthin is also suggested for prevention of neurological disorders.

Immunomodulatory activity of a water-soluble polysaccharide extracted from mussel on cyclophosphamide-induced immunosuppressive mice models

Summary: This study investigated the protective effect of mussel polysaccharide (MP) on cyclophosphamide-induced intestinal mucosal immunosuppression and microbial dysbiosis in mice. The results showed that MP can stimulate cytokine secretion and transcription factor production, activate the NF-kappa B pathway, and improve short-chain fatty acid levels. In addition, MP can modulate gut microbiota composition, increasing the abundance of probiotics and reducing the proportion of pathogenic species. These findings suggest that MP has potential immunomodulatory activity and can improve gut health.
