Summary: This study prepared lutein nanoemulsions through ultrasonic homogenization method, optimized the composition and preparation conditions, and evaluated their anti-inflammatory activity and long-term stability. The results showed that lutein affected the secretion levels of interleukin-6 (IL-6), interleukin-10 (IL-10) and monocyte chemotactic and activating factor (MCAF). The addition of propyl gallate (PG) greatly improved the retention rate of lutein and the particle size stability of the lutein nanoemulsion.

Summary: This is the first report to evaluate the effect of natural antioxidants, pH, and green solvents on the yield and stability of catechins during the extraction process from green tea leaves. The results showed that using green solvents augmented with natural antioxidants and at a low pH of 2 resulted in the highest yield and better stability of catechins.

Summary: The study revealed the high efficiency of enzyme assisted microemulsion technique in extracting lutein from marigold petals powder, with the potential to protect lutein under diverse stresses and show superior stability compared to ethanol extract. Despite gradual decrease over storage time, the microemulsion protected the initial loaded lutein under acidified conditions and harsh UV radiation.

Summary: In this study, the stabilities of caffeic acid (CA) and ferulic acid (FA) were systematically tested by exposure to different factors, confirming cis-CA and cis-FA as the only degradation products. A stability-indicating gas chromatographic-mass spectrometric method was developed and validated for the determination of trans-CA and trans-FA in the presence of their degradation products, providing a reliable tool for analysis.

It was found that lower pH, longer exposure duration, and higher temperature can all lead to increased lutein loss.
