From laboratory to scale-up by modelling in two cases of β-carotene extraction from vegetable products

The laboratory investigation of beta-carotene separation from rose hip fruits (RHFs) powder and carrot noodles (CNs) was analyzed by means of mathematical modelling, in order to develop models for process scale-up. The developed models contain parameters characterizing species transport inside and outside of vegetal material particle as well as species interphase equilibrium distribution. The model parameters were estimated by experimental data capitalization. The solvent type, liquid-solid ratio and extraction temperature were selected as process factors in 13carotene extraction. Having a significant influence on the process yield, these factors determined the values of model parameters. A model based on process control by external diffusion of extracted species and particle swelling was adopted for beta-carotene extraction from RHFs, whereas an internal diffusion one was chosen to describe the process in the case of beta-carotene extraction from CNs. The model parameters were identified by least squares method using theoretical and experimental data characterizing the dynamics of species extraction yield. The scale-up of counter current multistage extraction was performed through analysis of the processes studied at laboratory level. (C) 2014 The Institution of Chemical Engineers. Effects of enzymes on protein extraction and post-extraction hydrolysis of non-animal agro-industrial wastes to obtain inputs for cultured meat

Summary: This study evaluated the possibility of extracting proteins and obtaining hydrolysates from non-animal agro-industrial waste using enzymes for the production of cultured meat inputs. Results showed that the application of enzymes can maximize the use of protein from these wastes, providing a low-cost and environmentally friendly route with nutritional potential for cultured meat.

Plant protein hydrogel as a delivery system of curcumin: Characterization and in vitro release Kinetics

Summary: A study was conducted to prepare green gram protein hydrogel enriched with curcumin and evaluate its physicochemical properties. The results showed that the hydrogel had high encapsulation efficiency, swelling capacity, and antioxidant property. Furthermore, applying the hydrogel as a coating on tomatoes and apples proved to be effective.

Lipid recovery from deep eutectic solvents by polar antisolvents

Summary: This study developed a novel strategy to separate dissolved oils from imidazole/hexanoic acid mixture and regenerate the solvent using polar antisolvents. Aseptic microwave sterilization and validation of food containing particles

Summary: Microwave and ohmic heating are popular choices for aseptic processing due to their rapid heating capabilities and better product quality. This study aims to find an alternative approach to simulate processing conditions by modeling and validating the process using surrogate particles and microorganisms. A mathematical model was used to simulate heat transfer in fluid and solid particles. The process was validated using simulated particles and surrogate microorganisms, with magnetic implants in spherical particles to measure residence time distribution. The microwave aseptic system was successfully validated for producing shelf-stable particulate food products.
