We report progress in the study of olive oil phenolic metabolites in humans and identify a new hydroxytyrosol metabolite called hydroxytyrosol acetate sulphate, which was determined using tandem MS, after ingestion of 30 ml of olive oil with a high phenolic content (500 mg/kg oil), reaching a maximum concentration of 1.63 mu M. In order to understand and explain the generation of this metabolite, two different pathways are proposed. (C) 2012 Elsevier Ltd. All rights reserved.
