Summary: This study investigates the impact of difficulties in self-completion on response rates and sample characteristics in dietary recalls. The findings show that one third of participants were unable to complete the online self-completed 24-HRs, and this was associated with older age, non-white ethnicity, and lower educational level. Compared to interviewer-administered 24-HRs, self-completed 24-HRs included fewer items and reported lower intakes of energy, fat, saturated fat, and sugar.

Summary: In this study, green coffee beans were fermented using different yeast and lactic acid bacteria starters, and the effects on metabolite profiles were analyzed. There was a clear separation between the groups fermented with LAB and yeast, with different associated metabolites. Chlorogenic acid levels were higher in LAB strains, particularly lower in Candida parapsilosis and Pichia guilliermondii. Caffeine levels were highest in Pediococcus pentosaceus and lowest in C. parapsilosis. This study provides comprehensive information on the metabolic changes after green coffee bean fermentation.

This scoping review summarized studies that combined detailed dietary surveys with questionnaires in national surveys and identified the purpose of this combination. The findings can be used as a reference for future national nutrition surveys that introduce new dietary survey methods.

Summary: The study established kinetic models and shelf life prediction models for colour and chlorophyll levels in vacuum-precooled green beans using reaction kinetics and the Arrhenius equation. Results showed that the change rate constants of colour parameters and chlorophyll levels followed the Arrhenius law dependence on temperature, successfully predicting the shelf life of the green beans.

Summary: In this work, the application of supramolecular chemistry concepts in dendritic assemblies enabled the formation of advanced dendrimer-based nanotheranostic devices with unique properties. The vesosomes emitted green nontraditional intrinsic fluorescence (NTIL) and showed stability in biological medium, as well as cytotoxic activity against cancer cells. The self-organization of dendrimers into tertiary structures promoted the emergence of new properties, allowing the same component to function as both antitumoral drug and fluorophore.

Summary: This study proposes a real-time coffee-bean defect inspection algorithm using a near-infrared hyperspectral sensor and deep learning. The algorithm achieves high accuracy and real-time sorting speeds, which is considerably beneficial for smart agriculture and subsequent applications. Commercializing the algorithm with a robot can create a comprehensive yet affordable coffee-bean real-time inspection system, reducing labor costs and advancing smart agriculture.

Summary: This study evaluated the chemical compositions of green coffee beans and their correlation with thermal contaminants in roasted coffee. Positive correlations were found between the formation of 5-HMF, furan, 2-and 3-methylfuran and various compounds in green coffee beans. Additionally, significant positive correlations were observed between acrylamide levels and several compounds in green beans. Negative correlations were found between certain compounds and active constituents, and slight negative relationships were observed between acrylamide and certain compounds. This study provides valuable insights for selecting coffee beans with high nutrition and low chemical risks.
