Summary: This study assesses the health risks associated with nitrate pollution in groundwater and agricultural products in Mashhad city. The results show that nitrate concentrations exceed the permissible limits in groundwater and are particularly high in root-tuber and leafy vegetables. The consumption of groundwater and certain produce poses potential health risks, especially for children. The presence of total coliforms in groundwater suggests the release of sewage and manure in certain areas of Mashhad.

Summary: The study analyzed the physiochemical properties and nitrate concentration in coconut water to estimate the associated risk for nitrate intake. Results showed a considerable nitrate concentration with a mean of 165 mg/L and a maximum of about 340 mg/L. Average nitrate intakes from consumption of 350 and 700 ml of coconut water were about 21% and 42% of its maximum acceptable daily intake, respectively.

Summary: A cost-effective, environmentally friendly anthocyanin-based paper sensor with high sensitivity and optical visibility was developed for rapid detection of ammonia in aqueous solutions. The sensors, fabricated from anthocyanin extracted from different sources and alkalinized samples, showed visible color changes for ammonia concentrations as low as 2 mg NH3-N/L, demonstrating their potential as promising analytical tools for on-site screening of ammonia. Spike recovery results of the sensors were comparable to those of standard spectrophotometry methods, indicating their reliability and accuracy.

Summary: The study found that encapsulating and delivering potassium nitrite using vegetable tubular cellulose can effectively reduce microbial load in meat products. The high retention rate of potassium nitrite in the cellulose composite shows promise for serving as a chemical preservative in meat products. Further research is needed to develop the final technology for nitrite delivery in meat and meat products.

Summary: This study examined the impact of nitrate contamination in drinking water and vegetables on the health of infants in the northern Gaza Strip. The research found high levels of nitrate in groundwater and drinking water, with carrots, potatoes, and zucchini having varying nitrate concentrations. The study also revealed a significant percentage of infants with methemoglobinemia in the study area. Exposure to nitrate-contaminated drinking water and vegetables increased the levels of methemoglobin in infants.

Summary: The aim of this research was to determine the concentrations of nitrates and nitrites in different types of vegetables commonly consumed in Split and Dalmatian County. Through random selection, 96 samples of different vegetables were collected. The study used high-pressure liquid chromatography (HPLC) with a diode array detector (DAD) to determine the nitrate and nitrite concentrations. The results showed high nitrate concentrations in Swiss chard and high nitrite concentrations in leafy vegetables intended for fresh consumption, indicating the need for setting maximum nitrite limits in vegetables and expanding legal nitrate limits.

Summary: The study investigates the association between exposure to trihalomethanes (THMs) and nitrate in drinking water, inflammation markers, and colorectal cancer risk. Results suggest that recent residential levels of brominated THMs, chloroform and/or total THM are associated with increased serum concentrations of EGF, IL-8, IL-17E, and eotaxin. Inflammation markers did not show associations with nitrate or long-term residential THM levels. Most residential exposures, except chloroform, were positively associated with colorectal cancer risk. Serum concentrations of VEGF and periostin were positively associated with colorectal cancer, while EGF showed an inverse association. Additionally, one protein-exposure combination (periostin-recent ingested brominated THMs) was found to slightly mediate the association with colorectal cancer risk, suggesting that estimated THM exposure may play a role in inflammation processes.

However, evidence suggests that nitrate from vegetables can actually protect against cardiovascular disease and other chronic illnesses. The potential formation of carcinogenic N-nitrosamines from nitrate is still a concern.

Summary: This study conducted a meta-analysis to assess the association between chronic exposure to nitrate in drinking water and the risk of bladder cancer. The results showed that the current epidemiological evidence failed to establish a conclusive relationship between nitrate exposure and bladder cancer risk. There was high heterogeneity across studies, but removing studies with high risk of bias increased the risk and reduced the heterogeneity.

Summary: Recently, several epidemiological studies have investigated the potential health effects of prenatal exposure to nitrate, even at levels below the current drinking water standard. The reviewed studies showed indications of increased risk of preterm delivery, lower birth weight, birth defects, and childhood cancer related to prenatal nitrate exposure. However, more studies are needed to confirm these findings and explore the impact of other factors such as water consumption and diet.
