Summary: The generation of oxygen in gel electromembrane extraction (G-EME) introduces a negative error in the analysis of easily oxidized species like nitrite, as it oxidizes nitrite to nitrate. To minimize this oxidation effect and enable simultaneous analysis, oxygen scavengers were applied to the acceptor phase of the G-EME system. Among several tested scavengers, a mixture of sulfite and bisulfite (14 mg L-1) showed the highest efficiency in preventing nitrite oxidation. The optimized method allowed for the simultaneous determination of nitrite and nitrate in sausage samples.

Summary: This study evaluated the differences in microbiota and aroma of dry-cured pork loins manufactured with or without paprika and reduced ingoing amounts of nitrate and nitrite. The presence of paprika appeared to promote the proliferation of lactic acid bacteria and had a significant impact on the microbiota composition, resulting in clear differences in aroma profile.

Summary: Teas and traditional herbs are commonly used for health purposes, but they may contain carcinogenic contaminants. This study developed a quick method using capillary electrophoresis for simultaneous determination of nitrate, nitrite, and bromate ions in selected plants and tea samples. Optimal conditions were determined, and the method was found to be quick and efficient with detection achievable within 6 minutes.

Summary: This study investigates the uptake and metabolism of dietary NO3- in skeletal muscles and its effects on exercise performance. The results show that muscle rapidly takes up NO3- after ingestion, and this uptake decreases during exercise. This uptake of NO3- is associated with enhanced torque production during maximal intermittent contractions.

Summary: Accurate quantification of dissolved organic nitrogen (DON) has been a challenge. In this study, a direct method called size exclusion chromatography coupled with an organic nitrogen detector (SEC-OND) was developed, and the operating conditions were optimized. The SEC-OND method could accurately and conveniently quantify DON and dissolved inorganic nitrogen (DIN) species in water samples such as river water, lake water, wastewater, groundwater, and landfill leachate.

Summary: Simultaneous sulfide and nitrite removal process (SSNIR) is a robust and potentially practical autotrophic denitrification biotechnology for saline or hypersaline wastewater treatment. This study investigated the feasibility of SSNIR in treating saline or hypersaline wastewater, evaluated the toxicological effects of substrate and salinity on denitrification and sulfide removal performance, and determined the type of combined toxicity of substrate and salinity to SSNIR.
