Summary: In this study, Moringa oleifera leaf flavonoids (MOLF) with strong alpha-glucosidase inhibitory activity and MOL polysaccharides (MOLP) with strong cholic acid-binding capacity were prepared and mixed for the development of MOL highly-processed products with hypoglycemic and hypolipemic potentials. The main components of MOLF were identified as quercetin-3-O-glucoside and kaempferol-3-O-glucoside. MOLP composed of galactose, arabinose, rhamnose, and galacturonic acid showed the strongest effects on regulating carbohydrate and lipid digestion and absorption. MOLF and MOLP had a synergistic effect on delaying glucose diffusion and dialysis, delaying starch digestion, and binding bile acids.

Summary: This study identified a new biological source of PEA from the filamentous fungi Monochaetinula geoffroeana, reporting the highest yield of fungal PEA to date. Complexation studies with cyclodextrins significantly increased the water solubility of PEA. Additionally, salicylic acid was found to be an effective elicitor in enhancing PEA production by the fungi studied.

Summary: The overuse of antibiotics in poultry farming can lead to drug residue and antibiotic-resistant bacteria, posing a threat to both animal and human health. This study shows that Glycyrrhiza polysaccharides (GPS), derived from Chinese licorice, have immunomodulatory effects and can alter the gut microbiota composition. Furthermore, GPS can enhance intestinal immune responses, making it a promising alternative to prophylactic antibiotics as a poultry feed additive.

Summary: This study evaluated the potential of Glycyrrhiza polysaccharides obtained from Glycyrrhiza residues as a gelatin replacer in yogurt. The findings showed that the addition of Glycyrrhiza polysaccharides enhanced the growth of lactic acid bacteria, improved the water-holding capacity and texture of the yogurt, increased viscosity, and resulted in better overall quality.

Summary: Two neutral Glycyrrhiza polysaccharides (GP-LA and GP-HA) were extracted from Glycyrrhiza residues by hot acid extraction (HA) and low-temperature acid extraction (LA). GP-LA had various side chains composed of beta-L-Araf, beta-D-Xylp, and alpha-D-Glcp, while GP-HA had side chains composed of beta-D-Galp, alpha-D-Glcp, and D-Glcp. GP-HA had a single-branched structure, while GP-LA had a cross-linked network structure. Both GP-LA and GP-HA exhibited inhibition activity on alpha-glucosidase and caused changes in its secondary structure.
