Summary: This study evaluated maltodextrin/alginate and β-glucan/alginate mixtures as wall materials for microencapsulation of Schizochytrium sp. oil, an important source of DHA. Both mixtures exhibited shear-thinning behavior, with higher viscosity in β-glucan/alginate. Maltodextrin/alginate showed more homogeneous morphology and higher oil-encapsulation efficiency (90%) compared to β-glucan/alginate (80%). Furthermore, maltodextrin/alginate microcapsules displayed prolonged stability, while β-glucan/alginate microcapsules degraded under high temperature. Therefore, maltodextrin/alginate is a suitable wall material for microencapsulation of Schizochytrium sp. oil, providing high oil-encapsulation efficiency and stable microcapsules.

Summary: This work presents a feasible method for controllable preparation of monodisperse spherical alginate micro-capsules with structured multiphase oil cores, which have the potential to encapsulate multiple lipophilic actives that are not mutually soluble. Monodisperse (oil1 + oil2)-in-water ((O1 + O2)/W) droplets are generated using the assembled one-step co-flowing 3D-printed microfluidic chip. The size and shell thickness of the alginate microcapsules, as well as the number of the cores inside the microcapsules, can be precisely tailored, showing excellent controllability in the design of alginate microcapsules with multiphase oil cores.

Summary: The study investigated the antioxidant properties of exopolysaccharides (EPS) produced by Lysinibacillus sphaericus Ya6 under different osmotic stress conditions. The EPS was found to be a homogenous polysaccharide with a molecular weight of 89.62 kDa, composed of mannose and glucose. Under osmotic stress, both the molecular weight and monosaccharide composition of polysaccharides changed. Furthermore, all EPS showed antioxidant activity and the scavenging activity on DPPH radical increased with the aggravation of osmotic stress.
