Gelatin and exopolysaccharide (EPS) as wall matrix were investigated for safflower oil microcapsules using complex coacervation. The EPS from Pseudomonas PT-8 was negatively charged, which can react with positive charge of gelatin electrostatic to yield polymer rich phases. Single factor and orthogonal tests were carried out to determine optimal preparation conditions, mixing gelatin (30 g/L) and EPS (30 g/L) with a ratio of 5:4 at pH3.6 firstly, then coating safflower oil with 50 g/L gelatin-EPS, 60 g/L Tween 80, and Span 80 (1:1) as emulsifier and 3 transglutaminase (TG) as cross-linking agent, encapsulation efficiency of microcapsules reached 81.27% by cross-linking for 120 min at 20,000 rpm. Free flowing spherical microcapsules were made up of small round particles whose diameters were between 1 and 20 mu m. When microcapsule powder dissolved in water, it can be dyed well by safranin due to its good dispersivity. Evaluation of endotoxin suggested that gelatin-EPS was not contaminated by endotoxin. Practical applicationsGelatin and a novel microbial polysaccharide as shell matrix are used in safflower oil microcapsules. It can be easily digested by the body and effectively decrease undesirable taste and odor. It also can keep the ability of reducing blood viscosity, improving blood circulation and enhancing memory, due to the special shell.

Characterization and functional properties of conjugates of rice protein with exopolysaccharides from Arthrobacter ps-5 by Maillard reaction

Yuguang Zhao, Shuhong Ye, Huiping Wan, Xingxing Zhang, Mingqi Sun

Summary: This study investigated the potential nutritive value of rice protein (RP) through Maillard reaction and found that the synthesis of conjugates of RP and exopolysaccharide (EPS) greatly improved the functional properties of the molecules. The research also identified changes in molecular structure and properties in Maillard reaction products (MRPs), indicating a more efficient method for enhancing the application value of plant protein.

Characterization of antioxidant activity of exopolysaccharides from endophytic Lysinibacillus sphaericus Ya6 under osmotic stress conditions

Fengrui Yang, Jiuliang Chen, Shuhong Ye, Zhaofang Liu, Yan Ding

Summary: The study investigated the antioxidant properties of exopolysaccharides (EPS) produced by Lysinibacillus sphaericus Ya6 under different osmotic stress conditions. The EPS was found to be a homogenous polysaccharide with a molecular weight of 89.62 kDa, composed of mannose and glucose. Under osmotic stress, both the molecular weight and monosaccharide composition of polysaccharides changed. Furthermore, all EPS showed antioxidant activity and the scavenging activity on DPPH radical increased with the aggravation of osmotic stress.

Biosynthesis of resveratrol by an endophytic Priestia megaterium PH3 via the phenylpropane pathway

Xiaohan Zhang, Dong Zhang, Yan Ding, Zilong Li, Chenchen Wang, Shuhong Ye

Summary: In this study, the biosynthesis pathway and key enzymes of RES in Priestia megaterium PH3 were investigated. The highest RES production was achieved within a short time frame by optimizing fermentation conditions. This research provides valuable information and potential applications for RES production through bacterial fermentation.
