Wearable Sensors for Assessing the Role of Olfactory Training on the Autonomic Response to Olfactory Stimulation

Wearable sensors are commonly used to assess physiological signals without obtrusiveness. Olfactory training showed different autonomic responses, with increased familiarity leading to higher relaxation tendencies. This may have potential applications in personalized treatments for neuropsychiatric and eating disorders.
Wearable sensors are nowadays largely employed to assess physiological signals derived from the human body without representing a burden in terms of obtrusiveness. One of the most intriguing fields of application for such systems include the assessment of physiological responses to sensory stimuli. In this specific regard, it is not yet known which are the main psychophysiological drivers of olfactory-related pleasantness, as the current literature has demonstrated the relationship between odor familiarity and odor valence, but has not clarified the consequentiality between the two domains. Here, we enrolled a group of university students to whom olfactory training lasting 3 months was administered. Thanks to the analysis of electrocardiogram (ECG) and galvanic skin response (GSR) signals at the beginning and at the end of the training period, we observed different autonomic responses, with higher parasympathetically-mediated response at the end of the period with respect to the first evaluation. This possibly suggests that an increased familiarity to the proposed stimuli would lead to a higher tendency towards relaxation. Such results could suggest potential applications to other domains, including personalized treatments based on odors and foods in neuropsychiatric and eating disorders.

Nitrogen maceration of wine grape: An alternative and sustainable technique to carbonic maceration

Summary: The study aimed to compare carbonic maceration (CM) and nitrogen maceration (NM) in terms of their effects on the concentration of polyphenols, anthocyanins, volatile organic compounds (VOCs), and other components in Gamay wines. The results showed that NM resulted in higher concentrations of polyphenols and anthocyanins compared to CM. However, CM wines had higher levels of esters and volatile medium chain fatty acids (MCFA). Electronic nose measurements revealed distinct differences among the samples, which were consistent with the results of VOCs analysis. NM showed potential as an environmentally sustainable technique for producing new styles of macerated and aromatic wines.

Machine Learning Approaches in Diagnosis, Prognosis and Treatment Selection of Cardiac Amyloidosis

Summary: Cardiac amyloidosis is a rare restrictive cardiomyopathy caused by abnormal deposition of amyloid protein, leading to impaired organ function. Due to similar clinical symptoms with more common hypertrophic diseases, early diagnosis of cardiac amyloidosis is often delayed. Accurate differentiation of different types of amyloidosis is necessary for appropriate treatment. The underdiagnosis of cardiac amyloidosis delays necessary therapeutic procedures, hinders quality of life, and affects clinical prognosis. Diagnostic work-up includes identification of clinical features, electrocardiographic and imaging findings, and histological demonstration of amyloid deposition. Automated diagnostic algorithms using machine learning techniques can help overcome the difficulty of early diagnosis. This review aims to evaluate various diagnostic approaches and artificial intelligence computational techniques in detecting cardiac amyloidosis.

Valorization of an Old Variety of Triticum aestivum: A Study of Its Suitability for Breadmaking Focusing on Sensory and Nutritional Quality

Summary: Avanzi 3-Grano 23 (G23) is an old variety of Triticum aestivum from Lunigiana, Italy, where traditional farming communities have contributed to its success. G23 flour has unique nutritional and sensory traits but is not suitable for breadmaking due to technological limitations. This study explores the optimization of bread formulation using flour blending and leavening systems, finding that sourdough bread made with G23 flour has improved sensory and phytochemical profiles compared to traditional bread.

Wearable Sensors to Evaluate Autonomic Response to Olfactory Stimulation: The Influence of Short, Intensive Sensory Training

Summary: In recent decades, traditional descriptive analysis performed by skilled sensory panels has been deemed too complex and time-consuming for the industry needs, leading to the exploration of more efficient methods of sensory training. This study investigated the effectiveness of a short, intensive sensory training period using wearable sensors to monitor physiological signals related to emotions in a group of wine tasters. The results showed that even a two-day training period could effectively modulate autonomic nervous system activity and familiarize tasters with odorous compounds.

Effect of Different Packaging Strategies on the Secondary Shelf Life of Young and Structured Red Wine

Summary: When bottled wine is opened, the secondary shelf life (SSL) occurs, which can accelerate oxidation. This study aimed to evaluate the changes in two types of red wine during two tests to assess the SSL based on packaging systems. The variations in Total SO2, Free SO2, and other chemical parameters were used to determine the oxidation rate of the samples. The polymeric cap showed the best results, while other closures exhibited negative trends and reduced SSL for both red wines.

Effect of Fertilization Regime of Common Wheat (Triticum aestivum) on Flour Quality and Shelf-Life of PDO Tuscan Bread

Summary: The shelf-life of PDO Tuscan bread is influenced by the balance of N and P fertilizers and the type of modified atmosphere packaging. The addition of N increased amylose and phytochemical compounds, while the addition of P decreased them. However, excessive doses of N had a negative effect on flour quality. The use of N-2 and Ar gases in the packaging helped to prolong the shelf-life of the bread by reducing water loss and slowing down the staling process.

The protective combined effect of chitosan and essential oil coatings on cheese and cured meat against the oviposition of Piophila casei

Summary: This study explored the use of chitosan incorporated with essential oils from bay leaf, black pepper, and cinnamon to control oviposition behavior of Piophila casei on fresh foods. The concentration of 1% bay leaf EO and 0.5% black pepper EO showed the highest efficacy in repelling P. casei without negatively affecting sensory qualities of the treated foods. This research provides an effective solution for controlling P. casei infestation.
