Development of a fermented ice-cream as influenced by in situ exopolysaccharide production: Rheological, molecular, microstructural and sensory characterization

This study aimed to investigate the role of in situ exopolysaccharide (EPS) production by EPS+ Streptococcus thermophilus strains on physicochemical, rheological, molecular, microstructural and sensory properties of ice cream in order to develop a fermented and consequently functional ice-cream in which no stabilizers would be required in ice-cream production. For this purpose, the effect of EPS producing strains (control, strain 1, strain 2 and mixture) and fermentation conditions (fermentation temperature; 32,37 and 42 degrees C and time; 2,3 and 4 h) on pH, S. thermophilus count, EPS amount, consistency coefficient (K), and apparent viscosity (eta(50)) were investigated and optimized using single and multiple response optimization tools of response surface methodology. Optimization analyses indicated that functional ice-cream should be fermented with strain 1 or strain mixture at 40-42 degrees C for 4 h in order to produce the most viscous ice-cream with maximum EPS content. Optimization analysis results also revealed that strain specific conditions appeared to be more effective factor on in situ EPS production amount, K and 1750 parameters than did fermentation temperature and time. The rheological analysis of the ice-cream produced by EPS+ strains revealed its high viscous and pseudoplastic non-Newtonian fluid behavior, which demonstrates potential of S. thermophilus EPS as thickening and gelling agent in dairy industry. FTIR analysis proved that the EPS in ice-cream corresponded to a typical EPS, as revealed by the presence of carboxyl, hydroxyl and amide groups with additional alpha-glycosidic linkages. SEM studies demonstrated that it had a web-like compact microstructure with pores in ice-cream, revealing its application possibility in dairy products to improve their rheological properties. The effects of beetroot powder as a colorant on the color stability and product quality of white compound chocolate and chocolate spread

Summary: This study investigates the possibility of using spread (SC) and compound chocolate (CC) as carriers of betalains. The addition of beetroot powder significantly affects the quality parameters and visual properties of both SC and CC. It is found that the hardness and plastic viscosity values of CC increase with the amount of beetroot powder, while other properties remain unchanged. In addition, the use of beetroot powder decreases the color values of the samples and increases the redness associated with the pigment source.

Determination of rheological, melting and sensorial properties and volatile compounds of vegan ice cream produced with fresh and dried walnut milk

Summary: Demand for vegan foods has led to the use of plant-based milks, such as walnut milk, in the production of dairy products like ice cream. This study found that using walnut milk significantly affected the physical and chemical properties of ice cream samples, increasing their fat content and improving their rheological properties. Although it decreased the brightness value, walnut milk introduced different volatile compounds to the ice cream samples. Sensory evaluation showed that ice cream samples made with walnut milk were well-liked by the panelists and received similar scores to the control samples. This study demonstrates the potential use of walnut milk in ice cream production.

Isolation and characterization of yogurt starter cultures from traditional yogurts and growth kinetics of selected cultures under lab-scale fermentation

Summary: This study aimed to isolate, identify, and determine the technological characteristics of potential starter cultures from traditional yogurt samples. 19 S. thermophilus and 11 Lb. delbrueckii subsp. bulgaricus strains were identified for further application as starter cultures. The results showed that S. thermophilus strains had higher acidification capacity and Lb. delbrueckii subsp. bulgaricus strains had higher proteolytic activity. Additionally, the strains exhibited low antibiotic resistance.

Determination of Viscoelastic and Physicochemical Interactions of Dextran Type Exopolysaccharides (EPS) with Different Starch Samples

Summary: The rheological properties of different dextrans from three LAB strains were determined, and the interactions between dextran PDER21 and maize, wheat, and waxy maize starches were studied. The presence of dextran PDER21 increased the elastic behavior of maize starch and enhanced the elastic properties of wheat and waxy maize starches. Dextran PDER21 also affected the pasting properties of starches, leading to higher viscosity values in certain starch-dextran blends.

Valorization of viticulture waste as verjuice powders: their characterization, storage stability and application in beverage formulation

Summary: In this study, unripe grapes were used to produce verjuice powder, which was encapsulated with maltodextrin and pectin. The powders were evaluated for their properties and retention of phenolic compounds. The results showed that pectin encapsulation had higher phenolic retention compared to maltodextrin encapsulation. This study suggests that waste from viticulture can be transformed into valuable powders for potential applications and contribute to sustainable agriculture.

Influence of Heating on Thermal Stability of Essential Oils During Storage

Summary: This study examined the changes in antioxidant activity and thermal stability of bay laurel, lemon peel, and orange peel essential oils stored at different temperatures. The results showed that the antioxidant and antiradical activity of the oils decreased during storage, especially at elevated temperatures. The volatile oils obtained may have potential as natural antioxidants in food products.

Deer apple (Malus trilobata) fruit grown in the Mediterranean region: identification of some components and pomological features

It is also traditionally used to treat health issues including cholesterol, shortness of breath, diabetes, and hypertension. This study determined the organic acid, phenolic compound, sugar, and aroma composition of deer apple for the first time, revealing the most abundant components such as malic acid, fructose, and various phenolic compounds.

Summary: Liver disease is a major cause of global mortality, and identifying biomarkers for diagnosing its progression is crucial for improving outcomes. Targeted mass spectrometry is a powerful tool for verifying biomarker candidates and clinical applications, particularly for glycoproteins translation. However, the limitation of analyzing only one sample per run has become apparent. In this study, a high-throughput intact N-glycopeptides quantification strategy was developed, allowing the validation of 20 samples per run with an average analysis time of 3 minutes per sample. The strategy was applied in a cohort of 461 serum samples and identified a panel of 10 IgG N-glycopeptides that have strong clinical utility in evaluating the severity of liver disease.
