Enzymatic production of bioactive peptides from scotta, an exhausted by-product of ricotta cheese processing

The present work reports the enzymatic valorisation of the protein fraction of scotta, a dairy by-product representing the exhausted liquid residue of ricotta production. Scotta was subjected to ultra-filtration with membrane cut-offs from 500 to 4 kDa and the obtained protein-enriched fractions were used for the optimization of enzyme-based digestions aimed at producing potentially bioactive peptides. Nine different commercial proteases were tested and the best digestion conditions were selected based on protein yield, fraction bioactivity and foreseen scale up processing costs. Scale up of the 3% Pancreatin or 5% Papain processes was performed up to 2 L (37 degrees C or 60 degrees C respectively, 1 h incubation), and the digestion efficiency increased with the reaction volume as well as antioxidant activity (up to 60 gBSA eq/L and to 1.7 gAA eq/L). Retentate 1 digested fractions also showed, for the first time in dairy-based peptides, anti-tyrosinase activity, up to 0.14 gKA eq/L. Digested proteins were sub-fractionated by means of physical membrane separations and 30-10 kDa fraction from Papain treatment showed the highest antioxidant and anti-tyrosinase activities. The peptide sequence of the most bioactive fractions was achieved.

Electro-responsive shape-memory composites obtained via dual-curing processing

Summary: In this study, electro-responsive shape-memory actuators were developed by incorporating a conductive heater in a dual-curing thiol-acrylate-epoxy shape-memory polymer. The addition of boron nitride agglomerates increased thermal conductivity and achieved faster shape-recovery. The results demonstrated that the electro-responsive actuators were faster in shape recovery compared to the conventional SMPs based on external heating.

Bidirectional Control between Cholesterol Shuttle and Purine Signal at the Central Nervous System

Summary: Recent studies have found that cerebral cholesterol formation is primarily controlled by astrocytes, which synthesize cholesterol and deliver it to neurons and oligodendrocytes through specific lipoprotein receptors. Various proteins and carbohydrates modulate the cholesterol shuttle, affecting lipoprotein receptor activity, function, and signaling. Purine receptors, particularly subtypes P2Y(2), P2X(7), and A(2A), play a role in neurodegenerative diseases such as Alzheimer's and Niemann-Pick C diseases by regulating brain cholesterol homeostasis. The precise mechanisms of these interactions are not well understood, but further research in the cholesterol-purine reciprocal control is warranted.

Summary: In this study, the antioxidant activity of natural phenolic compounds extracted from coffee residues was evaluated. The addition of these compounds to a poly(1,4-butylene succinate) matrix was found to increase the activation energy of thermo-oxidative degradation. The results were consistent with the ABTS radical scavenging assay, highlighting the potential of using active molecules from agri-food waste to enhance the antioxidant capacity of biopolymers.

Summary: This study assessed the effects of polyphenol-rich extract from non-compliant defatted green coffee beans on the properties and sensory profile of vacuum-packed pork burgers. The results suggest that 0.15% coffee extract is a promising alternative to improve the quality of refrigerated pork burgers.

Phytochemicals Recovery from Grape Pomace: Extraction Improvement and Chemometric Study

Summary: In the past 20 years, researchers have shown increased interest in using different types and combinations of enzymes to extract phenolic compounds from grape pomace. This study aimed to improve the recovery of phenolic compounds from Merlot and Garganega pomace using five commercial cellulolytic enzymes. The results showed that the enzyme/substrate ratio and incubation time had significant effects on the extraction yield, and the use of different enzymes resulted in different compositions of the extracts. The enzymatic and acetone extracts were found to be complex mixtures of compounds.

Caregivers' Burden in Parkinson's Disease: A Study on Related Features and Attachment Styles

Summary: Parkinson's disease (PD) is a chronic progressive neurological disease that affects both patients and caregivers. In our study, we found that female caregivers who cohabited with PD patients experienced higher burden compared to non-cohabiting caregivers. The burden was particularly severe in 7.7% of the participants according to the PQoL. The findings emphasize the importance of investigating the burden on PD caregivers and addressing their physical and psychological health to improve their quality of life.
