Summary: This study identified two highly homologous polyphenol oxidases (PPOs) in lotus roots (LR) with the highest catalytic activity at 35 degrees Celsius and pH 6.5. (-)-Epigallocatechin had the lowest Km value among the polyphenols identified in LR, while (+)-catechin showed the highest Vmax value. Molecular docking analysis revealed that (-)-epigallocatechin exhibited lower docking energy and formed more hydrogen bonds and Pi-Alkyl interactions with LR PPO than (+)-catechin. However, (+)-catechin entered the active cavity of PPO more quickly due to its smaller structure. Both compounds contribute to the browning mechanism of fresh LR as the most specific substrates for PPO.

Summary: This study evaluated the effects of multi-mode thermosonication (MTS) on the quality stability of strawberry clear juice (SCJ) during storage. MTS pretreatment significantly reduced color deterioration, enzyme activity, and changes in physicochemical properties. Summary: Non-enzymatic browning induced by polyphenol oxidation is a significant concern during the processing and storage of fruit and vegetable products. The study investigated the mechanism of non-enzymatic browning between catechin (CAT), chlorogenic acid (CQA), and their quinones in model systems during long-term storage. The results showed that CAT and catechin quinone (CATQ) were important precursors for browning, while CQA had a minor effect. The oxidation of CAT by CQAQ was faster than CAT autoxidation, and complex reactions between CATQ and CAT produced brown pigments during storage.

Results showed that polyphenols have different chemical characteristics in autoxidation and enzymatic oxidation, with enzymatic oxidation products having higher reducing power than autoxidation products, and polyphenols being more prone to autoxidation browning in an alkaline environment.

Summary: This study identified a safe and effective inhibitor, S-furfuryl thioacetate (S-Ft), from sulfur-containing compounds in food to inhibit enzymatic browning. Summary: This work addresses the problem of acquiring visible satellites using an antenna array in the presence of impulsive noise. The joint angle and number estimation of visible satellites is formulated as a joint l(1,1)-norms minimization problem by exploiting the spatial sparsity of visible satellites. To obtain a closed-form solution, a generalized conjugate function for complex-valued matrix variable is introduced and the joint l(1,1)-norms minimization is transformed into a Lagrangian dual function maximization. The effectiveness of the proposed approach is demonstrated through numerical results.

Summary: In this paper, the growth of ultrathin MnTe nanosheets on mica by the chemical vapor deposition method is reported. The thickness of the nanosheets can be controlled by tuning the gas flow rate, and the shape can be controlled by the H-2 concentration. Furthermore, MnTe/WS2 heterojunctions fabricated by the mechanical stacking method exhibit excellent photoresponsivity, external quantum efficiency, and photodetectivity, as well as higher photoresponse speed compared with the MnTe-based photodetector. This work provides a possible application of MnTe-based heterojunctions for developing high-performance photodetectors.

Summary: By introducing an appropriate amount of antimony oxide, MoS2 nanosheets with high 1T content (61.5%) were successfully synthesized using a chemical vapor deposition method. The 1T-2H hybrid structures grown in this way are thermodynamically stable and exhibit enhanced hydrogen evolution reaction (HER) activity.

Summary: A molecular sieve-assisted strategy is used to synthesize ultrathin 2D iron sulfide with different phases. Hexagonal FeS, tetragonal FeS, and non-stoichiometric Fe7S8 can be precisely synthesized by tuning the growth temperatures. The synthesized 2D iron sulfides exhibit high conductivity, superconductivity, and ferrimagnetism, providing a potential route for synthesizing other 2D compounds with different phases.

Summary: 2D Dion-Jacobson (DJ) phase lead-free hybrid perovskite has great potential in X-ray detection with high sensitivity, low detection limit, and superior anti-fatigue properties. The single-crystal-based X-ray detector of (HIS)(2)AgSbBr8 exhibited remarkable semiconductor characteristics and excellent photoelectric response. This innovative application of hybrid perovskites in eco-friendly and efficient X-ray detection opens up new possibilities in the field.

Summary: This study utilized a cross-channel visual-audio dual-task paradigm to investigate the role of working memory in multiple object tracking (MOT). The results showed that spatial working memory (SWM) significantly impaired the tracking capacity of the MOT task, while nonspatial object working memory (OWM) did not have a significant effect. These findings provide empirical evidence for the involvement of working memory, specifically spatial working memory, in multiple object tracking.

Summary: In this study, a self-reinforcing polyurethane adhesive is synthesized, which exhibits only interfacial failure but still possesses superior adhesive strength and toughness. The adhesive is designed by incorporating a hanging adhesive moiety, hierarchical H-bond moieties, and a crystallizable soft segment into one macromolecular polyurethane. The adhesive can effectively associate with the target substrate due to the hanging adhesive moiety, while the hierarchical H-bond moieties and crystallizable soft segment enable large lap-shear deformations and strain-induced crystallization, resulting in remarkable adhesive strength and work of debonding.

Summary: This paper proposes an efficient source enumeration algorithm for large-scale arrays using a two-step difference operation of linear shrinkage (LS) coefficients of the sample covariance matrix (SCM) in large-dimensional scenarios. It is shown that the difference between noise LS coefficients tends to zero and there exists a clear gap between the last signal LS coefficient (alpha) over cap ((d-1)) and the first noise LS coefficient (alpha) over cap ((d)) in relatively high signal-to-noise ratio (SNR) cases. This algorithm achieves initial source enumeration and improved estimation results, and it can estimate a large number of sources.
