The use of electrolyzed water as a disinfectant for minimally processed apples

Chlorine (sodium hypochlorite solution) is the most common disinfectant used in the fresh-cut industry, however, environmental and health risks related to its use have resulted in a need to find new sanitizers. Electrolyzed water (EW) is a promising alternative, showing a broad spectrum of microbial decontamination. In this study the efficacy of acidic electrolyzed water (AEW) and neutral electrolyzed water (NEW) as disinfectants of apple slices inoculated with Escherichia coli, Listeria innocua or Salmonella choleraesuis, individually or in a mixture, were compared to that of sodium hypochlorite solution and distilled water. Apple slices were inoculated with a 10(7) cfu/mL suspension of the pathogens and treated with diluted electrolyzed water. Bactericidal activity of washing treatments was assessed after 30 min and after storage for 5 days at 4 degrees C. AEW and NEW disinfection efficacy was compared to that of washings with sodium hypochlorite at the same free chlorine concentration and with distilled water. AEW diluted to 100 mg/L of free chlorine was the treatment with the highest bactericidal activity in all tested conditions (reductions obtained ranged from 1.2 to 2.4 log units) followed by NEW and AEW at 100 and 50 mg/L of free chlorine respectively. In general these treatments were equal or more effective than sodium hypochlorite washings at 100 mg/L of free chlorine. The effect of the different sanitizer washings when pathogens where in a mixture was similar to that which occurred when pathogens were individually inoculated. Combination of ferulic acid with Aloe vera gel or alginate coatings for shelf-life prolongation of fresh-cut apples

Summary: The study showed that the addition of ferulic acid can delay browning of fresh-cut apple discs and increase antioxidant activity, while the AV coating has a similar effect. In addition to reducing weight loss, FA is also effective in decreasing the survival rate of Listeria monocytogenes, thus enhancing product safety.

Exploring thermosonication as non-chemical disinfection technology for strawberries

The results showed that the disinfection treatments did not interfere with the survival of Salmonella enterica along the gastrointestinal tract. Ferulic acid application to control growth Listeria monocytogenes and Salmonella enterica on fresh-cut apples and melon, and its effect in quality parameters

Summary: This study tested the efficacy of ferulic acid (FA) in fresh-cut apple and melon to prevent the growth of Listeria monocytogenes and maintain fruit quality. The results showed that FA did not have a bactericidal effect, but had a significant effect against Listeria monocytogenes at the end of storage. The immersion application of FA was found to be the most effective method. Overall, FA could be used in fresh-cut apple and melon to prevent the growth of Listeria monocytogenes without affecting physicochemical quality.

Exploring the limit of detection on early implicit bruised 'Korla' fragrant pears using hyperspectral imaging features and spectral variables

Summary: This study aimed to compare the discrimination ability and detection limit of visible and short-wave near-infrared hyperspectral imaging features and spectral information on early implicit bruised pears. Physical characteristics were more sensitive than chemical parameters for bruised pears during postharvest storage. The changes in spectral variations at specific wavelengths could explain the bruising changes in pears. Discrimination models based on selected spectral variables could effectively identify bruised pear areas, and the combination of imaging features and spectral variables achieved higher discrimination rates.

Sucrose and brassinolide alleviated nitrite accumulation, oxidative stress and the reduction of phytochemicals in kale sprouts stored at low temperature

Summary: This study investigated the effects of sucrose, brassinolide (BR), and their combination on the storage quality of kale sprouts. The results showed that the combined treatment improved the growth and development of sprouts, reduced oxidative stress, and inhibited nutrient loss. Exploring shelf-life predictability of appearance traits and fruit texture in blueberry

Summary: This study evaluated a large set of blueberry cultivars to understand the relationship between mechanical texture and appearance characteristics at harvest and after storage, and tested multiple statistical models to predict shelf-life. The results showed that fruit characteristics measured at harvest or two weeks post-harvest can predict weight loss, texture change, and fruit wrinkling. These findings provide empirical data that blueberry breeders can use to select cultivars with extended shelf-life.

Summary: This study found that H2S treatment can delay the senescence process of postharvest pakchoi by regulating antioxidant system, endogenous H2S and NO metabolism. H2S increased the activities of antioxidant enzymes by up-regulating the expression of enzyme genes, reducing the accumulation of harmful substances. Furthermore, H2S increased the content of cysteine and nitrate in pakchoi by regulating the expression of related genes and enzyme activities, thus slowing down the senescence of pakchoi.
