Summary: Quantum chemical calculations using density functional theory were used to predict the antioxidant potential of urolithins, bioactive gut microbiota metabolites of ellagitannins and ellagic acid. Different reaction mechanisms were considered in water and lipid-like environments to evaluate their ability to counter oxidative stress. The results showed that most urolithins exhibited higher scavenging activity against reactive oxygen species compared to other potent antioxidants, which was confirmed by experimental assays.

Summary: The study reveals that soybean responds differently to isoflavone metabolism under varying light conditions, with higher accumulation observed in plants exposed to east-side lighting and mechanical leaf damage. Additionally, environmental factors such as temperature and rainfall influence the forms and accumulation of isoflavones.

Summary: This study aimed to optimize the extraction conditions of lychee seeds (LS) and longan seeds (LoS) using surface response methodology, and found that ethanol concentration and temperature significantly affected extraction yield, extractable phenolic compound, and antioxidant activity. The optimal conditions for maximizing the extraction yield, extractable phenolic compound, and antioxidant activity from LS and LoS were ethanol concentrations of 41% and 53%, temperatures of 51°C and 58°C, and corresponding times of 139 minutes and 220 minutes.
