Immunomodulatory activities of whey β-lactoglobulin tryptic-digested fractions

Although bioactive peptides can be obtained from whey protein hydrolysis, data about their immune effects are inconclusive. The in vitro effects on the human immune system of different beta-lactoglobulin tryptic-digested fractions separated by membrane filtration were evaluated, analysing the proliferation, cytokine secretion and differentiation of human peripheral blood cells. This procedure allowed the enrichment of peptide sets with specific features, suggesting that the differences in the peptidic composition were related to their immune function. The fraction enriched in large and acid peptides was able to induce Th1 responses, whereas fractions containing short peptides were involved in monocyte activation increasing TNF alpha secretion. Moreover, one of these fractions was able to induce TGF beta secretion and regulatory T cell differentiation, key mechanisms by which whey-derived peptides could impair allergic and inflammatory responses. No impact on immune cells was triggered by the unfractionated hydrolysate, supporting the use of membrane-fractionating techniques for obtaining immune bioactiveenriched fractions. Cardiovascular effects of approved drugs for rheumatoid arthritis

Summary: Various drugs used in the management of rheumatoid arthritis have anti-inflammatory effects that can hinder atherosclerosis development, but they may also increase cardiovascular risk. While controlling inflammation can reduce the progression of atherosclerosis, some drugs may also directly or indirectly promote atherosclerosis. The primary objective for clinicians should be disease control, selecting the most appropriate drug for each patient while considering joint and cardiovascular outcomes.

Metabolic Syndrome and Its Components Have a Different Presentation and Impact as Cardiovascular Risk Factors in Psoriatic and Rheumatoid Arthritis

Summary: Patients with chronic inflammatory arthritis, particularly psoriatic arthritis (PsA) and rheumatoid arthritis (RA), have a higher cardiovascular (CV) risk. The impact of metabolic syndrome (MetS) on CV risk in PsA and RA was compared. MetS had a different prevalence and impact on CV risk in PsA and RA, with hypertension as a distinct predictor in PsA and dyslipidemia as the strongest predictor in RA. The association of MetS and its components with CV events was stronger in PsA than in RA, suggesting a need for distinct prevention strategies.

Developing a framework for the implementation of recommendations for lifestyle factors for people with RMDs across Europe: assessment of current materials and implementation needs

Summary: Lifestyle factors have a significant impact on the progression of rheumatic and musculoskeletal diseases (RMDs) but their management is currently suboptimal. Existing informative materials on lifestyle factors for RMD patients in Europe have limitations in terms of coverage, literature support, and access, making successful interventions difficult to implement. This viewpoint discusses a roadmap to address these gaps at the European level using recent European Alliance of Associations for Rheumatology (EULAR) recommendations, which may also have applicability beyond rheumatology.

Influence of β-casein genotype on Cheddar cheese making and ripening

Influence of using different ratios of small ruminants (ovine and caprine) milk on compositional and proteolytic changes during ripening of raw milk lighvan cheese

Summary: Lighvan cheese made from different ratios of ovine and caprine milk (100:0, 75:25, 50:50, 25:75, 0:100) was analyzed during ripening to examine its chemical composition, proteolysis level, amino acid content, texture, and coagulant activity. The study found that using higher ratios of ovine milk led to decreased pH and moisture content, increased texture parameters, coagulant activity, soluble nitrogen fractions, fat, and protein contents in the cheese. Differences in gel electrophoresis and peptide profiles were observed. Leu and Phe were found to be the predominant free amino acids in the ripened cheese. In conclusion, lighvan cheese made with 75:25 and 50:50 ratios of ovine and caprine milk can be preferred due to their proper proteolysis indices and semi-hard texture.

Non-starter lactic acid bacteria and citrate fermenting bacteria in milk supply chain: Are they easily controlled?

Summary: The frequency and possible sources of non-starter lactic acid bacteria (NSLAB) and citrate fermenting bacteria (CFB) were evaluated at different stages of a milk supply chain. The study found a positive correlation between psychrotrophic bacteria and CFB, emphasizing the importance of good milking practices to control these bacteria. The results also showed that NSLAB and CFB populations remained high even after pasteurisation, suggesting the occurrence of post-heat treatment recontamination, biofilm formation, or the presence of thermoduric microbiota.

Effect of calcium-sequestering salts and heat treatment on the rheological and textural properties of acid gels from blends of skimmed buffalo and bovine milk

Summary: This study investigated the influence of adding 5 mM trisodium citrate (TSC) or disodium hydrogen phosphate (DSHP) and heat treatment on the acid gelation properties of blends of skim buffalo and bovine milk. The results showed that increasing the proportion of buffalo skim milk and higher heating temperature resulted in significant increases in gel properties. Differences in gel firmness were attributed to the gel micro-structure.

Effect of ultrafiltration on the cheesemaking properties of donkey milk

Influence of particle size on powder flow behaviour, textural and viscoelastic properties of milk-based whippable emulsions

Summary: This study investigates the rheological, textural, and powder flow characteristics of whippable oil-in-water emulsion with different particle sizes. It is found that smaller particle sizes improve the dispersed phases and increase viscosity, while reducing adhesiveness. Compared to the control sample, whippable emulsions with larger particle sizes have higher cohesiveness and are less prone to deformation and crumbling.

Influence of calcium depletion and addition on heat stability, buffering capacity, partitioning of minerals and iron binding properties of buffalo milk

Depletion and addition of calcium have effects on the properties of milk, including heat stability, pH, and buffering capacity. Furthermore, the alteration in calcium also affects the distribution of minerals in milk. These findings contribute to a better understanding of the functionality of buffalo milk during the processing of buffalo-based products with altered calcium content.

Multidimensional evaluation of techno-functional properties of yoghurt bacteria

Summary: The microbial diversity in traditional foods is decreasing due to widespread industrial production and the use of a limited number of strains as starter cultures. In this study, the microbiological and physicochemical properties of traditional and industrial yoghurt samples were investigated. The best starter cultures for yoghurt production were identified as 4 Lactobacillus bulgaricus and 6 Streptococcus thermophilus isolates.

Exploring the applications of plant-based coagulants in cheese production: A review

Mare and donkey milk are rich in carbohydrates and proteins with lower fat content. Camel milk is rich in calcium, potassium, vitamin A, and does not contain the major allergen β-lactoglobulin.
