Coccidiostats are used in the control of protozoan infections in different food producing animals. They are most widely used as feed additives in intensively reared species such as pigs and poultry to maintain animal health and in some cases enhance feed conversion. However, a number of these drugs are used in the control of infections in beef and lamb production. Coccidiostat residues have been frequently reported in meat and eggs in a number of countries since the late 1990s. This has prompted increased research and surveillance of coccidiostat residues in food. This paper reviews the various coccidiostat agents used in animal production, including their chemical properties, mode of action and activity. Legislation concerning coccidiostats, limits for residues in food, monitoring and occurrence of residues in food is discussed. Methods for residue determination in food, including screening and physicochemical methods are discussed in depth. The paper concludes with a synopsis of the current state of coccidiostat residue analysis and future perspectives. (C) 2014 Elsevier Ltd. All rights reserved.

Suitability of High-Resolution Mass Spectrometry for Routine Analysis of Small Molecules in Food, Feed and Water for Safety and Authenticity Purposes: A Review

Maxime Gavage, Philippe Delahaut, Nathalie Gillard

Summary: In recent years, high-resolution mass spectrometry has become increasingly popular for food, feed, and environmental analysis. Due to its full-scan analysis and ability to screen an unlimited number of compounds in a single analysis, it is well-suited for monitoring contaminants and residues. Through relevant studies and methods, high-resolution mass spectrometry can achieve detection levels in compliance with current legislation, making it a versatile and appropriate tool for routine testing.

An analysis of the spatio-temporal occurrence of anthelmintic veterinary drug residues in groundwater

D. Mooney, K. G. Richards, M. Danaher, J. Grant, L. Gill, P-E Mellander, C. E. Coxon

Summary: A comprehensive study in the Republic of Ireland investigated the occurrence of 40 anthelmintic residues in groundwaters, revealing 17 compounds detected at 22% of sites, with albendazole and its transformation products being most frequently found. Multivariate statistical analysis identified significant source and pathway factors related to the occurrence of anthelmintics in groundwater, and temporal variations showed higher frequencies and concentrations during specific months coinciding with increased usage and meteorological events. This study provides valuable insights into the presence of anthelmintics in Irish groundwater and seasonal trends critical for assessing potential impacts of climate change.

Effects of ultrasound-assisted cooking on the physicochemical properties and microstructure of pork meatballs

Xinxin Zhao, Xiankun Sun, Bangcheng Lai, Rui Liu, Mangang Wu, Qingfeng Ge, Hai Yu

Summary: This research investigates the effect of different ultrasonic powers on the quality of pork meatballs. The results show that pork meatballs cooked with ultrasound at 450 W have the most uniform and smooth structures. The water retention capacity of the meatballs first increased and then decreased with increasing ultrasonic powers. The study concludes that appropriate ultrasonic power can improve the physicochemical properties and microstructure of pork meatballs, making ultrasonic technology an effective method for improving meat product quality.

Extending the theory of planned behavior to examine the role of meat-eater identity: The case of dry-aged beef

Luciano Gutierrez, Roberto Lai, Giuseppe Nocella, Maria Sabbagh

Summary: Dry-aged beef provides a unique taste experience with superior qualities compared to traditional beef. This study analyzed the factors influencing consumers' intention to consume and willingness to pay for dry-aged beef, using an extended version of the Theory of Planned Behavior model that includes meat-eater identity. The results showed that meat-eater identity significantly influenced participants' intention to consume, with the most significant impact mediated by attitudes, subjective norms, and perceived behavioral control. Furthermore, the intention to consume strongly influenced the willingness to pay for dry-aged beef.
