When Media Health Stories Conflict: Test of the Contradictory Health Information Processing (CHIP) Model

Summary: This study tested a model guided by Uncertainty Management Theory about how uncertainty from contradictory health information is managed through information seeking. The results confirmed key principles of the model and revealed that individuals with high health self-efficacy and positive outcome expectations of information search were more likely to manage uncertainty through information seeking.

Segmented assimilation as a mechanism to explain the dietary acculturation paradox

The classic assimilation segment, despite having higher income and education, had the poorest diet. Summary: Contradictory and complex health messages in the media can lead to uncertainty in decision-making. This study found that the distinction between message contradiction and complexity is not reflected in laypersons' perceptions. Instead, perceptions of contradiction and complexity contribute to issue uncertainty, which in turn leads to decision uncertainty.

Home-prepared meals among college students at-risk for food insecurity: A mixed-methods study

Summary: The ability to cook at home is important for college students, especially those facing food insecurity, as it can improve their diet quality and reduce costs. However, barriers such as time constraints and limited resources may hinder their meal preparation skills. This study used a mixed-methods approach to assess the relationships between food security, motivation, and meal preparation skills among college students. It found that students with food insecurity had lower meal preparation skills and perceived ability to consume a healthy diet. Focus groups suggested that in-person and online cooking classes, information cards in the food pantry, and incentives could help improve home-meal preparation skills among college students.
