Development of High-Fibre, Ready-to-Bake Flour Mixtures from Purple Wheat

Summary: Nowadays, consumers are increasingly focused on healthy eating, however, insulin resistance and type 2 diabetes are impacting many individuals. Generally, people are paying more attention to consuming foods rich in fiber. In this study, we developed high-fiber ready-to-bake flour mixtures using purple wheat flour (white and wholemeal) and fortified them with inulin, chia seed flour, and psyllium husk flour. After determining the nutritional parameters of the raw materials, we conducted four sets of experiments to prepare bread rolls and test the final products. Ultimately, we developed three blends with the appropriate mixing ratios of enriching agents.

Dough Rheological Properties and Macronutrient Bioavailability of Cereal Products Fortified through Legume Proteins

Summary: Cereal products are important sources of protein, but their nutritional quality may be poor due to imbalanced amino acid content. Combining legume proteins with cereals can enhance their nutritional value, but the cereal processing industry needs to address this possibility. However, incorporating legume protein concentrates and isolates may also affect the functionality and bioavailability of some cereal constituents.

Summary: The expression of BRAF RNA in lung adenocarcinoma is increased and associated with tumor necrosis, immune checkpoint biology, and outcomes. Further research on targeting the overexpressed BRAF pathway in lung adenocarcinoma is recommended.

Single-cell transcriptomics reveal extracellular vesicles secretion with a cardiomyocyte proteostasis signature during pathological remodeling

Summary: In a study on the hypertrophy of cardiomyocytes, it was found that aberrant Wnt activation leads to a proteostasis signature in extracellular vesicles and transcriptomic profiling, indicating early patho-physiological states. Aberrant Wnt activation has been observed in failing cardiomyocytes. Further analysis shows enrichment of extracellular vesicles related processes in hearts with Wnt activation, and the identification of differentially enriched proteins including proteasome constituents, chaperones, and cardiac proteins. These findings suggest that the secretion of extracellular vesicles with a proteostasis signature plays a role in the early adaptation of cardiomyocytes and may have diagnostic and prognostic implications.

Assessment of Bioactive Profile of Sorghum Brans under the Effect of Growing Conditions and Nitrogen Fertilization

Summary: This study evaluated the bioactive profiles and antioxidant potentials of brans from six sorghum varieties using spectrophotometric methods. Results showed that the bran of red varieties contained a higher amount of polyphenols and tannins and exhibited higher antioxidant capacities than the bran of white varieties, with the exception of one red genotype. Two red varieties had the highest total polyphenol contents. In conclusion, red-colored varieties are a good source of polyphenols and the environmental conditions greatly affect the bioactive profile of sorghum.

The Relationship between Rehydration Time and Tenderness at Different Rehydrating Water Temperatures in Freeze-Dried Pork Loin

Summary: This study investigates the preparation parameters of freeze-dried meat for fast rehydration and restoration of original tenderness in low-temperature environments. The results show that with proper preparation, meat can be quickly rehydrated and restored to ideal tenderness within a short period of time.

Antineoplastic drugs inducing cardiac and vascular toxicity - An update

Summary: With the improvement in cancer prognosis, there has been an increase in survival rate among cancer survivors. However, the use of anti-neoplastic drugs has led to an increase in morbidity among these survivors due to cardiovascular complications. These complications include arrhythmias, myocardial ischemia, heart failure, arterial hypertension, thromboembolic events, and accelerated atherosclerosis. The drugs not only target cancer cells but also affect normal cells within the cardiovascular system, leading to toxicity.
