Summary: Due to universal contamination and synergistic toxicity of multiple mycotoxins in foodstuff, a novel dual-channel immunochromatographic assay (ICA) based on improved up-conversion nanoparticles (IUCNPs) was developed for rapidly detecting aflatoxin B1 (AFB1) and zearalenone (ZEN). The IUCNPs-ICA exhibited high specificity for the targeted mycotoxins, and showed excellent accuracy with low detection limits. The method also demonstrated good stability and precision during long-term storage, suggesting potential for on-site screening in agricultural products.

Summary: This study investigated the formation of ZEN-zein complex using ultrafiltration, multi-spectroscopic, and molecular modeling techniques. The results showed that ZEN can interact with zein to form a complex driven by hydrophobic force and hydrogen bonds. The conformational changes induced by binding with ZEN were revealed by Fourier transform infrared spectroscopy and circular dichroism.

Summary: Edible insects provide a viable source of animal protein, but concerns over food safety arise with insect consumption. This study examines the main mycotoxins found in insects, strategies to mitigate contamination, and their effects on insect metabolism. Research indicates that certain edible insect species from Coleoptera order can be raised on low mycotoxin-contaminated substrates without impacting survival and development. Fasting and substrate replacement can also reduce mycotoxin concentrations in insects. Overall, this study highlights the importance of controlling mycotoxin levels in edible insects to ensure their safety for consumption.

Summary: Crops can be contaminated by fungi producing mycotoxins, with over 400 different mycotoxins described so far. This study evaluates the prevalence of mycotoxins in corn and corn-derived products in Romania. Fumonisins were found to be the most prevalent mycotoxin, while zearalenone had the lowest presence. The levels of these mycotoxins were within the legal limits.

Summary: The degradation of AFB1 and ZEA in corn using power ultrasound is investigated, and it is found that this method has a significant effect on corn quality. The power intensity, solid-liquid ratio, and ultrasonic treatment modes significantly affect the degradation rates. Ultrasonic treatment promotes the dissolution and partial oxidation of mycotoxins in water.

Summary: This study aimed to analyze the key factors inducing the interconversion of hidden ZEN with free ZEN during maize processing. The results showed that thermal and alkaline processing converted hidden ZEN into free ZEN, while acid processing converted free ZEN into hidden ZEN. The temperature and pH-induced interconversion rules were also applicable to practical maize processing.

Summary: In recent years, there has been a growing concern about milk pollution by aflatoxin M1 due to the increasing prevalence of aflatoxins in animal feeding and dairy product consumption. A study was conducted to determine the transfer of aflatoxin B1 into milk and its effects on production and serological parameters in goats. Goats were exposed to different doses of aflatoxin B1 for 31 days and the concentration of aflatoxin M1 in milk was found to significantly increase with the amount of aflatoxin B1 ingested. However, the ingested amount did not affect the aflatoxin M1 carryover, indicating a certain resistance of goats to the effects of aflatoxin B1.

Summary: This study investigated the effects of Aflatoxin B1 (AFB1) and zearalenone (ZEN) on the intestines and ovaries of pregnant and lactating rats. The results showed that AFB1 reduces digestion, absorption, and antioxidant capacity in the intestines, increases intestinal mucosal permeability, and disrupts the intestinal microbiota. ZEN exacerbates the intestinal injury caused by AFB1. Additionally, AFB1 affects ovarian genes and signaling pathways, while ZEN may either exacerbate or counteract AFB1's toxicity on ovarian gene expression. This study highlights the importance of mycotoxins in the development of intestinal and ovarian diseases in pregnant and lactating mammals.

Summary: This study developed and validated a method for the simultaneous determination of multiple mycotoxins in milk using high-performance liquid chromatography. Mixture planning and fractional factorial design were utilized to optimize the mobile phase and flow rate, followed by the application of a rotational central composite design for further optimization. In addition, an extraction method based on the QuEChERS method was developed. The method showed good performance in evaluating the occurrence of mycotoxins in milk samples.

Summary: By studying the in vivo kinetics and biotransformation of AFB(1) in dairy cows, it was found that AFB(1) transformed into AFM(1) within 48 hours, and the clearance period of AFM(1) in milk was no more than 2 days. The carry-over rate of AFM(1) in milk during continuous ingestion experiments was around 1.15-2.30%.
