Summary: Applying intermolecular co-pigmentation to mulberry anthocyanins can enhance their stability. Among the selected co-pigments, ferulic acid showed the strongest co-pigmentation reaction under specific conditions. Co-pigments with more free hydroxyl groups facilitated the co-pigmentation, and methyl contributed more to color enhancement. Various analysis methods confirmed the formation of hydrogen bonding, π-π stacking, and hydrophobic interaction between co-pigments and mulberry anthocyanins.

Summary: In this study, the polyphenolic profile of Mesona chinensis Benth (MCB) was determined using UPLC-Q-TOF-MS/MS, identifying a total of 57 compounds including 45 polyphenols. Among them, 23 phytochemicals were identified in MCB for the first time. The antioxidant activities were found to be positively correlated with the polyphenolic levels, with MCB produced in Guangdong Raoping showing the best antioxidant activity and strongest inhibitory effect on alpha-glucosidase.

Summary: This study aimed to investigate the effects and mechanisms of action of Osthole (OST) in breast cancer 4T1 cells. The results showed that OST inhibited cell proliferation, blocked cells from remaining in S-phase, and induced apoptosis. OST mainly affected phospholipid biosynthesis, methyl histidine metabolism, pyrimidine metabolism, and beta-oxidation of very long-chain fatty acid pathways in 4T1 cells, possibly via inhibition of mTOR/SREBP1/FASN signaling.

Summary: Metabolic profiling was used to investigate changes in plasma and urine metabolites following Aβ injection and donepezil treatment in rats. Donepezil improved cognitive impairment induced by Aβ through restoring metabolic disorders. This study provides basic data for understanding the effects of Aβ and donepezil on plasma and urine metabolites in rat models of AD.

Summary: Ginseng residue, a by-product of ginsenoside extraction, was compared to ginseng tablets using UPLC-Q-TOF/MS analysis, revealing the presence of 39 compounds in both samples. The study found that while ginsenosides were present in small amounts in the residue, a significant amount of polysaccharides was retained. Furthermore, ginseng residue showed strong antioxidant effects, indicating its potential as a functional food raw material.

Summary: This study investigated the metabolic alterations during ischemia-reperfusion injury using metabolomic analysis. A total of 82 differentially expressed metabolites were identified, with some significantly elevated in the reperfusion group. Metabolomics pathway analysis revealed the importance of glycerophospholipid metabolism, linoleic acid metabolism, pyrimidine metabolism, and galactose metabolism in the response to cerebral ischemia-reperfusion. This study provides important insights into the metabolic changes induced by cerebral ischemia-reperfusion.

Summary: This study proposed a new method for discriminating and quantifying black ginseng. The black ginseng samples were divided into incomplete and complete black ginseng based on accurate quantification of six ginsenosides. Ultrahigh-performance liquid chromatography-quadrupole-time of flight/mass spectrometry (UPLC-Q-TOF/MS) combined with a multivariate statistical analysis strategy was then employed to differentiate the two groups.
