There is a strong genetic background control of the content and composition of anthocyanins in grapes, therefore the anthocyanin profile is a suitable parameter for fingerprinting. Anyway, several studies showed how non genetic factors such as environmental conditions and viticultural practices, can influence the distribution and the concentration of anthocyanins. A statistical analysis performed considering the influence of thinning and gird-ling alone or in combination on Sugrathirteen vines showed how the investigated factors significantly influence various physical-chemical parameters (sugars accumulation, organic acids, etc.) as well as single anthocyanins detected by HPLC. In particular the results show how the treatments were able not only to affect total poly-phenols and anthocyanin concentration, but moreover it was possible an analysis of anthocyanins profile variation in relation to the agronomical treatments performed at different timing (berry set and veraison).
