This paper reports the results from a formative evaluation of a mixed-reality (MR) eating prototype developed in collaboration with a restaurant for older adults in Holstebro, Denmark. The prototype is used to demonstrate to the older adults the idea of MR eating in two virtual environments. We use qualitative techniques to address the question: What virtual environment do mobility-restricted older Danish adults perceive as engaging and suitable for pleasurable, MR solitary meals? The participants repeatedly used the label coziness to describe their desired atmosphere for an eating environment. They critiqued the realism, color scheme and cleanliness of the presented virtual environments. Results from a card-sorting task where participants matched their preferred environments with specific meals, showed that their classifications were based on safety, realism, practicality, social acceptability, time, palatability, and indoor-outdoor considerations.

An Engaging Serious Game Aiming at Awareness of Therapy Skills Associated with Social Anxiety Disorder

Summary: This study aimed to design and evaluate a serious game to raise awareness of cognitive behavioral therapy skills associated with social anxiety disorder among university students through three iterations. Findings showed that the game was successful in terms of attention, usability, aesthetic appeal, worthwhileness, and narrative understanding, but could be improved by allowing more in-game personalization with users' own life experiences.

Perceived visual comfort and usefulness of a circadian lighting system implemented at a nursing home

Summary: This study investigates how staff at a Danish nursing home experienced and perceived a circadian lighting system and found that training and introduction to the system were crucial for satisfaction and prolonged use. The results showed that the staff considered the circadian lighting system more suitable for work and valued the ability to adjust the light to different needs. Furthermore, the study found that the circadian lighting system can reduce caregiver burden for night shift workers.

Associations among social engagement, meal-related behaviour, satisfaction with food-related life and wellbeing in Danish older adults living alone

Summary: This study explored the associations between meal-related behavior, social engagement factors, satisfaction with food-related life (SWFL), and subjective well-being in Danish older adults living alone. The results showed that home cooking frequency and self-perceived cooking skills were positively associated with SWFL, while commensality was positively associated with SWFL but not with subjective well-being. Loneliness was negatively associated with SWFL and subjective well-being. Satisfaction with food-related life and subjective health status were positively associated with subjective well-being.

Tell me what you see: An exploratory investigation of visual mental imagery evoked by music

Evaluation of staff's perception of a circadian lighting system implemented in a hospital

Summary: Natural and electrical lighting have received attention in hospital environments for their benefits to hospital staffs, shift workers, and patients. This study investigated the satisfaction and perception of a circadian lighting system (CLS) among staff in a newly built hospital. The results showed that the CLS was highly satisfactory and easier to use and adjust compared to the pre-existing lighting system. The ability to customize the lighting for individual patients in rooms with multiple patients was highly appreciated. The findings highlight the importance of close collaboration with occupants and continuous adjustments for a successful implementation and long-term use of CLS in hospitals.

How can a foundation be outlined for a successful serious game to increase reading engagement

Summary: This study aims to support mandatory reading of a novella for high school students through a serious game. The study includes 41 students, with the experimental group using a serious game for reading and the control group engaging in analog reading. Evaluation was based on a questionnaire and in-depth interviews with teachers and students. The findings showed positive effects on engagement in the experimental group, with increased attention and reward. However, there was no difference in narrative engagement, indicating effective storytelling. The study also outlined a game design process, with a focus on illustrating a protagonist with schizophrenia.

Get a Variable Grip: A Comparison of Three Gripping Techniques for Controller-Based Virtual Reality

Effects of Walking Together in a Co -Located Virtual Reality Game

Summary: This paper presents a study that explores the effects of two locomotion techniques on players' experiences in a co-located virtual reality game. The participants played a two versus-two game, either physically walking or using VR controller while standing. Walking resulted in higher social presence, lower simulator sickness, a more natural experience, a tendency to forget about using controllers, and a concern for maintaining distance from other players.

Revisiting Audiovisual Rotation Gains for Redirected Walking

Summary: This study investigated how spatialized sound affects perceptual detection thresholds for rotation gains in virtual environments with different visibility levels. The results showed no significant effects of sound spatialization or visibility on detection thresholds, indicating that visual rotation gains may be robust to auditory interference and useful even in environments with limited visibility. Further empirical studies are needed to confirm the dominance of vision over audition in this context.

The application of ice glazing containing D-sodium erythorbate combined with vacuum packaging to maintain the physicochemical quality and sweet/umami non-volatile flavor compounds of frozen stored large yellow croaker (Pseudosciaena crocea)

Summary: This study investigated the use of ice glazing containing D-sodium erythorbate (DSE) and vacuum packaging to maintain the quality of large yellow croaker during frozen storage. The results showed that vacuum packaging effectively inhibited ice crystal growth and minimized water loss, while the combination of vacuum packaging and 0.3% DSE-infused ice glazing maintained freshness indicators at low levels throughout the 300-day storage period. This combination was considered the most effective in preserving the quality of the fish.

Hypoglycemic effect and intestinal transport of phenolics-rich extract from digested mulberry leaves in Caco-2/insulin-resistant HepG2 co-culture model

Summary: This study investigated the transport and hypoglycemic effects of phenolics in mulberry leaves using an in vitro digestion model. The results showed that digested phenolics had higher absorbability and could inhibit glucose digestion and absorption. Phenolics also regulated glucose metabolism. Luteoforol and p-coumaric acid were found to be the primary phenolics strongly correlated with the hypoglycemic ability of mulberry leaves.

Simultaneous extraction, separation, and analysis of 5-caffeoylquinic acid and caffeine from coffee co-product by PLE-SPE x HPLC-PDA two-dimensional system

Summary: This study proposed an integrated and automated procedure for extracting, separating, and quantifying bioactive compounds from coffee co-products. By optimizing the extraction, separation, and analysis method, real-time analysis was achieved. The results suggest that coupling different techniques can efficiently extract, separate, and analyze phenolic compounds, providing an integrated method to produce high-added value ingredients for various applications.

Geographical origin discriminatory analysis of onions: Chemometrics methods applied to ICP-OES and ICP-MS analysis

Summary: Geographical origin plays a crucial role in determining the quality and safety of agricultural products. In this study, ICP analysis was used to determine the inorganic elemental content of onions and identify their geographical origin. Chemometric methods were applied to analyze the ICP results, and the accuracy of distinguishing between Korean and Chinese onions was found to be excellent. The findings suggest that this method can be beneficial for identifying agricultural products.
