Hypothesis: This study demonstrates that tuning the shell thickness of lipid particles can modulate their oxidative stability. We hypothesized that a thick crystallized shell around the incorporated fish oil would improve the oxidative stability due to the reduced diffusion of prooxidants and oxygen. Experiments: We prepared solid lipid nanoparticles (5% w/w lipid phase, 1.5% w/w surfactant, pH 7) by using different ratios of tristearin as carrier lipid and omega-3 fish oil as incorporated liquid lipid stabilized by high- or low-melting lecithin. The physical, polymorphic and oxidative stability of the lipid particles was assessed. Findings: The high-melting lecithin was the key in inducing the formation of a solidified tristearin shell around the lipid particles by interfacial heterogeneous nucleation. Lipid particles containing a higher ratio of tristearin showed a better oxidative stability. The results revealed that a crystallized tristearin layer above 10 nm was required to inhibit oxidation of the incorporated fish oil. This cut-off was shown for lipid particles containing 50-60% fish oil. This research gives important insights into understanding the relation between the thickness of the crystallized shell around the lipid particles and their chemical stability. (C) 2016 Elsevier Inc. A research note: effect of pH on meat iridescence in precooked cured pork

Summary: The objective of this study was to investigate the effect of pH change on iridescence intensity and extent of cooked cured pork. The results showed that iridescence was positively correlated with pH and water content, and negatively correlated with cooking loss. Hydration state and light scattering from microstructure may be important factors that determine the degree of iridescence in cooked meat products.

Influence of wet extrudates from pumpkin seed proteins on drying, texture, and appearance of dry-cured hybrid sausages

Summary: Hybrid meat products, which partially replace pork meat with texturized pumpkin seed proteins, were studied for their drying behavior, composition, and texture. Results showed that low levels of meat replacement had no significant differences compared to the all-meat formulation, but higher levels resulted in changes in composition and texture attributes.

Complex Coacervation and Precipitation Between Soluble Pea Proteins and Apple Pectin

Summary: This study investigated the formation of complexes between soluble pea proteins and apple pectin. The results showed that predominantly soluble biopolymer complexes were formed at pH 5 and low ratio, while more insoluble complexes were formed at lower pH and higher ratios. The particle sizes of the complexes ranged between 20 and 100 μm. Heating increased the amount of insoluble complexes at acidic conditions, but had minimal effect on the size of complexes at higher ratios. Electrostatic and hydrophobic interactions played a major role in the complex formation.

Ability of (extruded) pea protein products to partially replace pork meat in emulsified cooked sausages

Summary: This study investigated the impact of replacing 20% pork meat in cooked sausages with pea protein isolate (PPI), pea low moisture extrudates (LME), and pea high moisture extrudate (HME) on the nutritional, techno-functional and sensorial properties. The results showed that the inclusion of pea products did not affect the amino acid profile, but significantly reduced anti-nutritional factors and allergenic contents. However, it led to weaker networks, softer texture, and noticeable color changes.

Understanding the effect of homogenisation pressure on emulsion and foam properties of aerosol whipping cream

Summary: Homogenisation is a crucial process in the production of aerosol whipping cream (AWC), and this study investigates the impact of different homogenisation pressures on AWC, with and without the addition of a saturated monoacylglyceride of medium chain length (me-sMAG). The results show that adding me-sMAG can improve the texture and stability of AWC, but excessive homogenisation pressure can lead to flocculation and reduced foam firmness.

Influence of Different Stainless Steel Finishes on Biofilm Formation by Listeria monocytogenes

Summary: The biofilm formation of L. monocytogenes on different stainless steel surfaces was investigated. It was found that there was no significant correlation between surface roughness and the number of adhering cells. Homogenization improves foaming properties of insoluble pea proteins

Summary: High-pressure homogenization improved the foaming properties of insoluble pea proteins at pH 3 and 5. At pH 3, the homogenization disrupted large protein aggregates into smaller particles, resulting in the generation of foams. At pH 5, homogenization resulted in the formation of aggregates made of smaller protein entities, allowing insoluble pea proteins to foam.

Influence of Finely Chopped Meat Addition on Quality Parameters of Minced Meat

Summary: The use of larger processing equipment for minced meat production may affect its structure, but not its quality. Adding finely chopped meat (FCM) at different concentrations can simulate the destruction of meat cells. Analysis showed that intensive processing can be detected by the amount of non-intact cells (ANIC), but it does not significantly affect the quality of minced meat.

Sensory Texture and Mastication Physics of Multi-Phase Meat Products

Summary: This study investigated the biomechanical changes during oral processing of two-phase food prototypes consisting of mixtures of ground beef and beef batter. The research findings showed that an increase in the proportion of fibrous particles resulted in higher muscle activity and longer duration per bite, while a higher proportion of isotropic substance led to higher amplitudes of jaw movement and faster jaw kinetics.

Stabilization of solid lipid nanoparticles with glycyrrhizin

Summary: This study investigates the effect of saponin glycyrrhizin on the formation and stability of solid lipid nanoparticles. The results showed that glycyrrhizin can facilitate the formation of stable crystalline lipid particles and slow down polymorphic transition. The concentration of glycyrrhizin and the pH value play a role in the crystallization behavior, polymorphic stability, and physical appearance of the nanoparticles. Overall, glycyrrhizin demonstrates an impressive ability to stabilize solid lipid nanoparticles, which is significant for various industries.

Homogenization increases stickiness of concentrated pea protein- apple pectin mixtures

Summary: This study evaluated the impact of homogenization on the stickiness of pea protein - apple pectin mixtures, and investigated the effect of two concentrating methods on homogenized pea protein dispersions. The results showed that smaller particle size of homogenized pea proteins led to increased stickiness when vacuum evaporated, and vacuum evaporation prevented re-aggregation of protein particles compared to freeze-drying.

Mechanistic exploration of Co doping in optimizing the electrochemical performance of 2H-MoS2/N-doped carbon anode for potassium-ion battery

Summary: In this study, the influence of transition metal doping on the electronic and mechanical properties and electrochemical performance of 2HMoS2/NC was investigated using Cobalt (Co) as an example. Co doping was found to effectively improve the electronic conductivity and active site areas of 2H-MoS2/NC at different positions, optimizing the adsorption and diffusion capability of potassium ions. Furthermore, the study revealed the optimal roles of different types of nitrogen atoms in kinetic adsorption, diffusion, and interfacial stability of potassium ions. These findings provide guidance for the experimental design of high rate 2H-MoS2/NC electrode materials and the optimal design of other functional composite materials.

Summary: This study presents a novel heterojunction structure (SrTiO3/CN-TAL10.0) for enhanced photocatalytic water splitting (PWS). The incorporation of thiophenedicarboxaldehyde (TAL) through copolymerization significantly improves the photocatalytic activity of carbon nitride (CN) while maintaining its photostability performance. The optimized composition allows efficient isolation of photoinduced charge carriers and enhanced charge transport, resulting in a remarkable increase in overall photocatalytic efficiency.

Polyamide nanofiltration membranes by vacuum-assisted interfacial polymerization: Broad universality of Substrate, wide window of monomer concentration and high reproducibility of performance

Summary: This study demonstrates the advantages of vacuum-assisted interfacial polymerization (VAIP) in fabricating polyimide nanofiltration membranes. By using vacuum filtration, aqueous solutions of PIP can be evenly distributed on different microfiltration substrates, leading to the fabrication of uniform and ultra-thin polyamide layers with excellent performance. The membranes exhibit high rejection rates and water permeance, as well as satisfactory long-term stability.

Multi-layering of carbon conductivity enhancers for boosting rapid recharging performance of high mass loading lithium ion battery electrodes

Summary: This research developed an effective approach to enhance the charging rates of lithium ion batteries (LIBs) by strategically incorporating carbon nanotube (CNT) conductivity boosters into Li4Ti5O12 (LTO) electrodes. Multi-layer architectures comprising CNT-rich and CNT-free LTO electrode layers were manufactured using a layer-by-layer spray coating method to promote charge transfer kinetics of high mass loading electrodes. The best performing multi-layer was paired with a spray-coated LiFePO4 (LFP) positive electrode, resulting in attractive power performance that outperformed conventional LTO || LFP combinations.

Surfactant-free microemulsions (SFMEs) as a template for porous polymer synthesis

Summary: This study investigates the relationship between the morphology of PMMA monopolymers and PMMA-PHEMA copolymers with the expected nature of surfactant-free microemulsions (SFMEs) before polymerization. It is found that previously mesostructured, surfactant-free mixtures can produce porous polymers of different morphologies, while unstructured, oil-rich regions lead to solid, transparent polymers without nanostructured morphologies. Additionally, a surfactant-based reference system shows similar phase behavior and polymer morphologies as the comparable surfactant-free system, indicating the importance of the hydrotropic behavior of HEMA in this system.

Morphology regulation of isomeric covalent organic frameworks for high selective light scattering detection of lead

Preparation and dynamic color-changing study of fluorescent polymer nanoparticles for individualized and customized anti-counterfeiting application

Potassium regulating electronic state of zirconia supported palladium catalyst and hydrogen spillover for improved acetylene hydrogenation
