Trends and Hotspots of Starch Fermentation Research: Bibliometric Analysis Based on CiteSpace

This review analyzed and commented on selected articles published in the field of starch fermentation over the past 10 years (2012-2022) using the CiteSpace software. The research progress and emerging trends of starch fermentation were discussed. The results showed that China had the highest number of publications, with Jiangnan University being the most prolific institution and Akihiko Kondo the most prolific author. Food fermentation and clean energy research were the main areas of concern in this field.
Fermentation is a common topic in starch scientific research and is widely utilized in the food and pharmaceutical industry. Although many papers on starch fermentation have been published in the past 10 years (2012-2022), reviews of the overall knowledge structure of the discipline are relatively rare. Research in this area progresses rapidly. To stay current with the emerging trends, this review uses a bibliometric analysis method based on CiteSpace software to analyze, review, and briefly comment on selected articles published in the field of starch fermentation over the past 10 years. The research progress and emerging trend of starch fermentation are discussed. A total of 4943 references are used for analysis on CiteSpace. The results showed that from 2012 to 2022, the rate of published articles and the number of citations have increased. China is in first place by number of publications. Jiangnan University is the most prolific institutions, and the most prolific author is Akihiko Kondo. Among the category collaboration, Agriculture and Food Science and Technology are the first in the two sets of 5 year periods. The keyword ethanol shows the highest burst strength level. In addition, food fermentation and clean energy research are the main areas of concern in this field. This review aims to provide new insights for promoting the industrialization development and clinical application of starch fermentation technology.

Improving the cold water swelling properties of oat starch by subcritical ethanol-water treatment

Relation between adhesiveness and surface leachate rheological properties of cooked noodles: From the view of starch fine molecular structure

Summary: Adhesiveness is an important sensory property of noodles. This study evaluated the adhesiveness of cooked noodles and analyzed the composition and structure of the noodle leachate. The results showed that adhesiveness is positively correlated with loss modulus parameters and can be reduced by increasing the content of long amylopectin chains and large granules in the wheat starch. The rheological approach using noodle surface materials was found to be useful in predicting noodle adhesiveness as a sensory characteristic.

Modulating the glycemic response of starch-based foods using organic nanomaterials: strategies and opportunities

Summary: This review discusses the significance of organic nanomaterials (ONMs) in lowering glycemic index and serving as encapsulating agents of enzyme inhibitors. Encapsulation of bioactive compounds in ONMs leads to enhanced enzyme inhibition and improved stability in the gastrointestinal tract. ONMs also show potential in protecting and releasing insulin for glycemic index management.

Amorphous packing of amylose and elongated branches linked to the enzymatic resistance of high-amylose wheat starch granules

Summary: In this study, wheat starch granules with different crystalline polymorphisms and amylose contents were digested in vitro. The results showed that B-type high amylose wheat starch exhibited distinct changes in the multi-level structures of digestion-resistant fractions, suggesting that elongated branches in B-type starch contribute to the formation of resistant fraction against alpha-amylase. The absence of surface pores and channels in the amorphous packing of starch polymers with elongated branches is proposed as the basis for the enzymatic resistance of granular HAWS.

Pasting properties of high-amylose wheat in conventional and high-temperature Rapid Visco Analyzer: Molecular contribution of starch and gluten proteins

Summary: The popularity of high-amylose cultivars of main crops is increasing due to their unique properties and enhanced nutritional values. This study evaluated the performance of high-amylose wheat (HAW) flours and starches with different amylose contents under high-temperature processing. The results showed that conventional RVA could not predict the pasting behaviors of HAW ingredients accurately, and the iodine colorimetry method was not a good indicator of the cooling and retrogradation process. Protein content and composition also influenced the pasting behaviors of HAW flours, and fine structural features of amylose and amylopectin played a regulatory role.

The effectiveness of current physical modifications in improving starch enzymatic resistance has not been consistent, suggesting the need for exploring novel strategies and identifying modification conditions that maintain starch structure.

Physical modification of high amylose starch using electron beam irradiation and heat moisture treatment: The effect on multi-scale structure and in vitro digestibility

Summary: This study investigates a new approach to manipulate the digestibility of high-amylose maize starch (HAMS) through combinative modifications - depolymerization via electron beam irradiation (EBI) and reorganizing glucan chains via heat moisture treatment (HMT). The results show that EBI increases the branching degree of the starch, while HMT increases the relative crystallinity and V-type fraction. However, the combination of EBI and HMT may have a negative effect on starch enzymatic resistance under simulated gastrointestinal conditions.

Unlocking the Potential of High-Amylose Starch for Gut Health: Not All Function the Same

Altered leaching composition of maize starch granules by irradiative depolymerization: The key role of degraded molecular structure

Summary: Limited knowledge exists on the regulation of molecular composition of starch leachates through irradiative depolymerization. This study investigated the leaching behavior of electron beam depolymerized maize starch and its relationship with modified starch granule structures. The findings showed a decrease in branching degree and the presence of a smaller amylopectin fraction in the leached starch, as well as changes in the granule properties. Principal component and Pearson correlation analysis revealed that the degree of branching and the newly-derived amylopectin fraction significantly correlated with the molecular size of leached starch molecules. The study suggests that cleavage of alpha-1,6 linkage plays a critical role in controlling the leaching process of irradiated starch granules, offering potential for optimizing starch-based food properties.

Altering structure and enzymatic resistance of high-amylose maize starch by irradiative depolymerization and annealing with palmitic acid as V-type inclusion compound

Summary: This study explored a new physical modification approach using electron beam irradiation and annealing to increase the enzymatic resistance of high-amylose starch. The combinative modification increased the crystallinity and gelatinization temperature, while decreasing the final digestion percentage. The extent of depolymerization was found to be crucial in determining the enzymatic resistance. The study also found a significant correlation between gelatinization onset temperature and digestion kinetic parameter.
