Chlorophylls, lutein and β-carotene play great but different roles in colour of rapeseed oil

This study investigated the effects of three natural colourants (chlorophyll, lutein, and beta-carotene) on the colour of rapeseed oil. The concentrations of these colourants were found to have negative linear correlations with the brightness and colour of the oil. Chlorophyll had the greatest impact on brightness, while the two carotenoids contributed more to the yellow and red colours.
Natural colourants have great effects on the colour of vegetable oil. A series of colourant-oil simulation systems were constructed to study the effects of chlorophyll, lutein and beta-carotene and their interactions on the colour of rapeseed oil. CIE L*a*b* and Lovibond RYBN colour codes were used to evaluate the colour of the simulation systems. There were good negative linear correlations between the concentrations of the three natural colourants and L* value in both single colourant-oil and two colourants-oil simulation systems. Chlorophyll had greater effect on lightness of rapeseed oil than lutein and beta-carotene. The contribution of the two carotenoids to the yellow colour was greater than that of chlorophyll. Lutein and beta-carotene contributed positively to the red colour of rapeseed oil. They had superposition effect on colour of rapeseed oil, and beta-carotene might contribute more to the colour than lutein. It provided a method to evaluate the contribution of colourant to the colour and a possibility to regulate oil colour in edible oil industry.

Glucosinolates or erucic acid, which one contributes more to volatile flavor of fragrant rapeseed oil?

Summary: This study investigates the impact of different erucic acid (EA) and glucosinolates (GLSs) content, as well as different degumming methods, on the volatile flavor profiles of fragrant rapeseed oil (FRO). A total of 171 volatile compounds were identified, with 87 compounds identified as key odorants. Methyl furfuryl disulfide was identified for the first time in rapeseed oil, with the highest odor activity values (up to 26805.46). The GLSs content had a greater impact on the volatile flavor profile of rapeseed oil compared to EA content. Rapeseed varieties with low EA and high GLSs were found to be suitable for FRO production. Silicon dioxide adsorption was an effective alternative to water degumming in FRO production. This study provides new insights for selecting raw materials and degumming methods in FRO production.

Remove Non-hydrated Phospholipids in Okra Seed Oil by Silicon Dioxide

Summary: Water degumming and silicon dioxide (SiO2) adsorption are common methods for removing phospholipids from edible oils, but they have poor effectiveness on okra seed oil. This study optimized the SiO2 adsorption process in water-degummed okra seed oil and compared the quality and flavor changes before and after degumming. The results showed that the optimal degumming procedure achieved a 43.3% removal rate of non-hydrated phospholipids by adding 1.43% SiO2 to the oil and stirring at 33.52 degrees C for 30.47 minutes.
