The food safety knowledge and microbial hazards awareness of consumers of ready-to-eat street-vended food

Controlling and ensuring the safety of street-vended foods in many countries is a challenge considering that these foods are often less expensive and readily available. The objective of this study was to determine the food safety knowledge based on microbial hazard awareness of street food consumers in the Johannesburg municipality, South Africa. A cross-sectional survey study was conducted using a structured food safety questionnaire designed for this study. A total of 402 respondents, individuals who buy and consume ready-to-eat street-vended foods were randomly selected at various street-food vending cites in the Johannesburg municipality. Data collection was by means of a face-to face interviews. The majority of respondents were black males younger than 35 years. Individuals of within different gender, race, level of education and monthly income groups significantly (p < 0.05) differed in their responses regarding the frequency of purchasing and confidence in the safety of street-vended food. Better taste followed closely by affordability and accessibility were the most cited reasons for purchasing street-vended food. Although the majority of respondents were aware that certain food borne bacteria can cause diseases that may lead to death, over 70% of them have never heard about Salmonella spp, Escherichia coli, Listeria monocytogenes and Campylobacter jejuni. Although some consumers doubt the safety of street vended foods, they are not deterred from consuming them. Gender, race, the level of education and monthly income affect the way consumers of street-vended foods perceived the safety of street-vended foods and their desire to purchase them. Summary: The study in Johannesburg, South Africa aimed to assess the food safety knowledge of street food vendors, as well as the compliance of their facilities with regulations and monitoring by authorities. Most vendors had moderate food safety knowledge, but lacked understanding of internal cooking temperatures and storage temperatures for ready-to-eat foods. While the majority of vendors' facilities had been inspected, more training is needed to improve the food safety knowledge of street food vendors.

Process optimisation for enzymatic clarification of indigenous wild watermelon (Citrullus lanatus) juice

Summary: This research investigated the physicochemical properties and optimized the processing conditions for the enzymatic clarification of crude wild watermelon juice. The results showed that the recommended optimal conditions for clarification were a 0.15% enzyme concentration, 60 minutes incubation time, and 60℃ incubation temperature. The optimal output parameters were a turbidity of 14.18 NTU, clarity of 0.04 Abs, lightness of 52.30 L*, viscosity of 1.96 cps, and brix of 3.08%.

This review article provides a comprehensive update on the ethnomedicinal uses, pharmacological activities, phytochemistry, and molecular mechanisms of pomegranate, which is important for drug discovery and treatment of various ailments.

Prevalence and quantitative assessment of foodborne viruses on the imported mussels in Polish market

Laser-induced fluorescence spectroscopy enhancing pistachio nut quality screening

Summary: Food safety and quality are increasingly important in our society, driving the development of novel optical food sensing technologies. However, current optical sensing technologies are often limited in their sensitivity and product variability. In this study, we developed a novel pistachio nut screening methodology using fluorescence spectroscopy and advanced chemometrics to simultaneously detect shells, tree parts, and aflatoxins. By optimizing hardware and software parameters, we achieved a high classification accuracy for healthy pistachio kernels.

Photon-phonon coupling cold sterilization technology for milk preservation

Systematic review on biosensors for the early detection of mycotoxins as endocrine disruptors

The analysis showed that the current literature primarily focuses on developing biosensors for detecting highly toxic and widely distributed mycotoxins in food, but there needs to be more focus on biosensors for detecting mycotoxins known as endocrine disruptors.

Discrimination amongst olive oil categories by means of high performance-ion mobility spectrometry: A step forward on food authentication

Summary: High-performance-ion mobility spectrometry (HPIMS) was used for the first time in the analysis of olive oil samples, following a simple liquid-liquid extraction procedure. The developed methodology is user-friendly, fast, and inexpensive, complying with the principles of green chemistry. The proposed approach, combined with multivariate analysis, showed potential in classifying olive oil samples based on their organoleptic quality, with high accuracy rates.

Summary: Food spoilage is primarily caused by microbial contamination. Curcumin has shown moderate antimicrobial activity as a food preservative. This study formulates curcumin with zinc acetate to enhance its efficacy, resulting in Cur-Zn with increased antimicrobial activity against multiple food-contaminating bacteria and fungi. With light illumination, the antimicrobial activity of Cur-Zn is further enhanced due to the photodynamic inactivation (PDI) effect.

Potential of antimicrobial peptide-fused endolysin LysC02 as therapeutics for infections and disinfectants for food contact surfaces to control Cronobacter sakazakii

Summary: This study demonstrates the enhanced bactericidal activity of engineered lysins fused with amphipathic antimicrobial peptides against Gram-negative bacterium Cronobacter sakazakii. The fusion lysins are capable of disrupting bacterial cells and significantly reducing the risk of infection within a certain range of temperature and pH. Additionally, the study also shows the bactericidal effect of these fusion lysins against other Gram-negative pathogens.

Quick preculture method for determining low concentration Vibrio spp. in contaminated seafood and its verification
