Summary: This study investigated the toxic mechanisms of hyoscyamine in zebrafish embryos using an untargeted metabolomics approach. The results showed that hyoscyamine exposure increased the accumulation of ROS and MDA, and altered the activity of antioxidant enzymes. Metabolic pathway analysis identified several pathways associated with the significantly changed metabolites. These findings indicate that hyoscyamine induces marked metabolic disturbance and potentially hazardous effects in zebrafish embryos.

Summary: This study investigated the total phenolics, total flavonoids, antioxidant activity, and metabolite profiles of Cosmos caudatus extracts obtained using different extraction methods and solvents. The results showed that ethanol extracts obtained through direct maceration method exhibited the highest antioxidant capacity. Principal component analysis and partial least squares discriminant analysis were performed to differentiate samples and correlate them with their antioxidant activity. Several compounds, including isoquercitrin, quercetin-3-O-rutinoside, avicularin, rutin, quercitrin, and vitexin, were identified as potential contributors to the antioxidant capacity of C. caudatus.

Summary: This study investigated the metabolite accumulation and protein expression of epsilon-polylysine in goat meat. The results showed that the amino side chain of epsilon-polylysine increased the activity of glycine aminotransferase, leading to an improvement in muscle quality of goat meat. Additionally, downregulation of enzyme phenylalanine hydroxylase expression resulted in an upregulation of l-phenylalanine and l-tyrosine.

Summary: The interaction between added flavors and protein plays a crucial role in the sensory quality and consumer acceptability of dairy products. This study investigated the molecular basis of the competitive interaction between beta-lactoglobulin and benzaldehyde and vanillic acid as flavor ligands. The results showed that both benzaldehyde and vanillic acid interacted with beta-lactoglobulin through covalent and non-covalent bonds, with specific localization on a peptide fragment of the protein. Molecular docking studies further predicted the binding modes of the flavor ligands. This study provides valuable insights into flavor interactions in dairy products and highlights the conformational changes of beta-lactoglobulin induced by flavor interaction.

Summary: This study investigated common metabolic perturbations between coronary artery disease (CAD) and metabolic syndrome (MetS) using serum metabolomics analysis. A total of 30 metabolites were identified for CAD and 26 metabolites for MetS, with logistic regression showing significant associations even after adjustments for clinical risk factors. A common metabolic signature analysis revealed 11 significant serum metabolites shared between CAD and MetS outcomes, with nine showing similar trends and improving risk prediction values for both diseases.

Summary: Mycotoxins are a significant contamination source in cereals, posing risks to human health and causing economic losses to the industry. This study developed a comprehensive strategy for analyzing 21 mycotoxins in Italian cereal grain samples using a simple sample preparation method and high-resolution mass spectrometry. The analysis revealed the presence of 11 mycotoxins, with α-zearalenol being the most frequently detected and deoxynivalenol exhibiting the highest contamination level. The study provides valuable information on the occurrence and co-occurrence of mycotoxins, especially those not regulated by the European Commission Regulation.
