Cysteine and homocysteine as biomarker of various diseases

Cysteine and homocysteine (Hcy), both sulfur-containing amino acids (AAs), produced from methionine another sulfur-containing amino acid, which is converted to Hcy and further converted to cysteine. This article aims to highlight the link between cysteine and Hcy, and their mechanisms, important functions, play in the body and their role as a biomarker for various types of diseases. So that using cysteine and Hcy as a biomarker, we can prevent and diagnose many diseases. This review concluded that hyperhomocysteinemia (elevated levels of homocysteine) is considered as toxic for cells and is associated with different health problems. Hyperhomocysteinemia and low levels of cysteine associated with various diseases like cardiovascular diseases (CVD), ischemic stroke, neurological disorders, diabetes, cancer like lung and colorectal cancer, renal dysfunction-linked conditions, and vitiligo.

Microwave heating instead of blanching to produce low-fat French fries

Summary: This study aimed to investigate the effects of microwave pretreatment instead of blanching on the quality of French fries. The results showed that microwave pretreatment could inhibit enzymatic browning and improve the appearance and texture of the fries. Additionally, microwave pretreatment significantly reduced the oil content and altered the microstructure of the fries.

Summary: Evidence shows that the storage period has a significant impact on the quality of yogurt. This study prepared three types of yogurt and evaluated their quality characteristics during different storage periods. The findings indicate that enzymatically hydrolyzed potato powder yogurt exhibits desirable water holding capacity, sensory properties, and improved antioxidant activities during storage.

Sustainable emerging sonication processing: Impact on fungicide reduction and the overall quality characteristics of tomato juice

Summary: Sonication is an emerging sustainable and eco-friendly technology that has been widely explored in food processing and preservation. It has the advantages of low energy consumption and high efficiency compared to conventional decontamination methods, and it does not generate secondary pollutants. In this study, the impact of sonication on anilazine fungicide reduction, bioactive compounds, antioxidant activity, colloidal stability, and microbial load of tomato juice was analyzed. The results showed that sonication treatment at 40 minutes achieved the highest reduction of anilazine in tomato juice, reaching 80.52%.

High-intensity ultrasonication impact on the chlorothalonil fungicide and its reduction pathway in spinach juice

Summary: Sonochemistry is a sustainable technology for food processing, preservation, and pesticide removal. This study investigated the impact of high-intensity ultrasonication on chlorothalonil fungicide degradation and the bioactive availability of spinach juice. The results showed that high-intensity sonication significantly reduced the chlorothalonil residues and increased the bioavailability of bioactive compounds in spinach juice.

It can also increase functional properties, release short-chain peptides, and decrease protein allergenicity. However, the application of HIU in industries is still at the research and small scale stage.

Development and bioassessment of high nutria-omega 5 cookies through animal modeling

Summary: The food industry can repurpose waste byproducts from fruit processing to create functional foods and valuable commodities. In this study, pomegranate seed oil (PSO) was obtained from leftover agro-waste, while sunflower meal protein concentrate (SMPC) was produced from sunflower oilseed cake. These two components were combined to produce High Nutria Omega 5 (HNO5) cookies.
