Nutritional improvement of copra meal using mannanase and Saccharomyces cerevisiae

Copra meal is a by-product of coconut milk extraction, contained 4.60 +/- 0.01 g/100 g DM and 62.19 +/- 0.53% of protein and fiber, respectively. The optimal condition for quality improvement of copra meal was investigated using Box-Behnken design combined with response surface methodology (RSM). The simultaneous saccharification and fermentation (SSF) of Copra meal was performed by mannanase enzyme and yeast, Saccharomyces cerevisiae. The concentration of mannanase was determined as the most important factor to increase protein content in copra meal. The protein content was increased by 64% when 0.7% of enzyme per copra meal dry weight, the ratio of copra meal to water at 1:4.56 and fermentation time of 90.25 h at 30 degrees C were used. The program predicted an increase of 3.06 g of protein/100 g dry matter; however, the experimental result showed an increase of 3.35 g/100 g DM of protein in copra meal. The 10 kg of copra meal SSF in Koji reactor, the protein content increased to 4.18 g/100 g DM, while fiber content decreased 49%. Moreover, amino acids were increased by 64.05% and oligosaccharides, especially mannohexaose, were increased to 0.708 g/g DM. Results showed that fermentation of copra meal with mannanase and yeast offers a potential method to improve the nutrition of copra meal as animal feed.

Pyrodextrins from waxy and normal tapioca starches: Molecular structure and in vitro digestibility

Summary: Pyrodextrins were prepared from acidified waxy and normal tapioca starches under different temperatures and times to investigate their in vitro digestibility and molecular structure. The results showed that pyrodextrin from waxy tapioca starch had higher levels of total and low-molecular weight indigestible carbohydrates compared to normal tapioca starch when prepared at higher temperatures and longer times. Furthermore, changes in molecular structure were observed, with waxy tapioca starch showing a greater tendency for thermal modification and increased non alpha-1,4/alpha-1,6 glucosidic linkages in the pyrodextrins with higher indigestible carbohydrate content.

Functional composition and antioxidant property of crude polysaccharides from the fruiting bodies of Lentinus squarrosulus

Summary: Lentinus squarrosulus (Hed Khon Khao) is a source of bioactive polysaccharides. Three types of crude polysaccharides extracted from L. squarrosulus showed differences in functional compositions and radical scavenging activities. LSP-CP and LSP-HP exhibited good ABTS scavenging abilities, while LSP-AP showed poor performance as an ABTS scavenger.

Analysis of Human Gut Microbiome: Taxonomy and Metabolic Functions in Thai Adults

Nutritional improvement of copra meal for swine feed

Summary: This study investigated the optimal hydrolysis conditions for improving copra meal using mannanase from Bacillus circulans in a fed-batch setting. The effects of hydrolyzed copra meal (HCM) and conventional copra meal (CM) on simulated swine gastrointestinal digestion were also studied. The experimental results showed that fed-batch hydrolysis under optimal conditions resulted in higher reducing sugar and total oligosaccharide yield compared to batch hydrolysis. Mannanase also reduced the fiber content and caused significant degradation of copra meal microfibrils. The simulated digestion revealed that HCM was more easily digested than CM.

Selection of pretreatment method and mannanase enzyme to improve the functionality of palm kernel cake

Summary: The impact of steam pretreatment and mannanase on the quality of palm kernel cake was investigated. Steam pretreatment increased protein content and decreased hemicellulose and lignin content in the cake. Mannanases from E. coli KMAN-3 and E. coli-Man6.7 showed the highest activity, and NT6.3 mannanase hydrolyzed steamed cake released the most reducing sugar, total sugar, and protein.

Bioactive composition and modulatory effects of Hed-Tean-Rad Mushroom, Macrocybe crassa on gut microbiota

Isolation and Characterization of Mannanase-Producing Bacteria for Potential Synbiotic Application in Shrimp Farming

Summary: This study isolated two bacterial strains, Man26 and Man122, from shrimp intestines and found that they have the ability to produce mannanase, an enzyme that digests MOS and other mannan-rich materials. These strains can tolerate a wide pH range and their crude enzymes significantly increased the release of sugars and proteins from copra meal, palm kernel cake, and soybean meal. These findings suggest that these bacterial strains could potentially be used in animal feeds to improve the utilization of feedstuffs.

Summary: Agro-waste and spent yeast are global environmental concerns, but they can produce bioactive mannan oligosaccharides (MOS) that have preventive and control effects against diseases. MOS can interact with body cells, induce immunity, influence enzyme activity, reduce oxidation, and modulate the microbiota. Research on the effects of MOS in humans is limited, highlighting the need for further investigation.

In the simulated gastrointestinal model, COPRA-MOS was beneficial for cecal fermentation, while in the chicken simulation model, it had a positive effect on the population of Lactobacillus.
