The present research attempts to characterize the effect of low temperatures, and the moisture content of maize (Kosmo 230) meant for sowing on its energy and capacity to germinate. Seeds were moistened to varying degrees and stored under various conditions; then, their germination energy and capacity were assessed. Sowing material with 15% moisture content showed slightly declined germination ability when stored at -25--20 degrees C for over three days, while the storage of seeds with a 25 and 30% moisture content at -5-0 degrees C for 1-3 days had the effect of seed conditioning. Seedlings obtained from conditioned seeds showed sustainability characterized by faster growth, and demonstrated nearly twice the size as other plants. Warehousing and storage of maize grains with a 11.12% moisture content at temperatures up to -25 degrees C did not significantly affect seed germination capacity or energy, irrespective of storage time.

Effect of Moldavian dragonhead seed residue on the baking properties of wheat flour and bread quality

Piotr Zarzycki, Anna Wirkijowska, Agnieszka Nawrocka, Katarzyna Kozlowicz, Marta Krajewska, Konrad Klosok, Ada Krawecka

Summary: The study investigated the effects of adding 3-12% defatted Moldavian dragonhead seed residue flour (MDF) to wheat flour on dough rheology and bread quality. The results showed that MDF increased water absorption, dough softening, bread yield, and decreased baking loss, porosity, taste, and bread volume. The addition of MDF also led to changes in textural indices and color attributes of the bread crumb.

Micronized Powder of Raspberry Pomace as a Source of Bioactive Compounds

Renata Rozylo, Ryszard Amarowicz, Michal Adam Janiak, Marek Domin, Slawomir Gawlowski, Ryszard Kulig, Grzegorz Lysiak, Klaudia Rzad, Arkadiusz Matwijczuk

Summary: Red raspberries, rich in nutrients and phytochemicals, can be used to create supplements. This study investigated the production of micronized raspberry powders and analyzed their molecular characteristics, sugar content, and biological potential. The results showed that micronization broke the intramolecular hydrogen bonds, increasing the content of simple sugars and phenolic compounds. Micronized powders had higher concentrations of ellagic acid derivatives and rutin, and exhibited increased antioxidant activity.

Effects of Ultrasound Treatment on the Physical and Chemical Properties of Ice Cream with a Strawberry Seed Oil Oleogel

Sybilla Nazarewicz, Katarzyna Kozlowicz, Bozena Gladyszewska, Klaudia Rzad, Arkadiusz Matwijczuk, Zbigniew Kobus, Eva Ivanisova, Lubos Harangozo, Tomasz Skrzypek

Summary: This study investigates the impact of ultrasonic treatment as an alternative to traditional pasteurization on ice cream properties. A strawberry seed oil oleogel was added to the ice cream recipe as the fat component. Chemical composition and physical properties of the ice cream were analyzed, and Fourier transform infrared spectroscopy was used for molecular-level analysis. The ice cream treated with ultrasound showed higher dry matter and carbohydrate contents, lower fat content, higher freezing point temperature, and more frozen water compared to traditionally pasteurized ice cream. This study demonstrates that ultrasonic treatment can be a beneficial alternative in ice cream production.
