Summary: In this study, an orange extract (OE) was extracted from orange peel using ultrasound-assisted extraction (UAE) and then encapsulated in zein nanoparticles. The results showed that the zein nanoparticles with orange extract (NpZOE) had a nanometric size, spherical shape, and positive zeta-potential. Both the OE and NpZOE exhibited high antioxidant capacity.

Summary: This study extracted polyphenolic compounds and vitamin C from by-products of Habanero pepper using natural deep eutectic solvents (NADES) and ultrasound-assisted extraction (UAE), and evaluated their antioxidant capacity. The results showed that extracts obtained with NADES had higher total polyphenol content, individual polyphenol concentrations, and antioxidant capacity compared to UAE extraction with methanol as the solvent.

Summary: This study investigated the impact of hydrolysis on whey protein concentrates (WPC) using ficin crude extract (FCE) under optimal conditions. The results showed that hydrolysis significantly improved antioxidant activity and solubility, but had no significant effect on emulsifying activity and foaming activity. Furthermore, it was found that ficin crude extract could hydrolyze 13-lactoglobulin, which is uncommon for other enzymes.

Summary: This study investigated the effects of an ethanolic leaf extract from the Glochidion wallichianum plant on the oxidative stability and physicochemical properties of a cooked sausage model system. The results showed that a low concentration (0.01%) of the extract effectively reduced lipid and protein oxidation, while higher concentrations led to discoloration. Incorporating a small amount of the extract as a natural antioxidant may help maintain the oxidative stability of cooked sausages.

Summary: The role of oxidative stress in inducing resistance of melanoma cells to dacarbazine was investigated, showing that metformin can alter various biomarkers involved in the resistance process. Additionally, metformin administration could either prevent or induce a DTIC-resistant phenotype, depending on the experimental conditions. These findings provide insights for future research on DTIC resistance in melanoma.

Summary: Oxidative stress plays a critical role in COVID-19 pathogenesis and the tissue injuries caused by SARS-CoV-2. Measurement of blood glutathione (GSH), H2O2, and catalase activity can help understand the disease's pathophysiology. Researchers found that COVID-19 patients had significantly reduced plasma H2O2 concentration compared to healthy individuals, indicating conversion into highly reactive oxygen species (ROS) that worsen the prognosis. Quantifying plasma H2O2 as a marker of disease progression and inducing antioxidant enzyme synthesis may be beneficial in reducing oxidative stress in severe COVID-19 cases.

Summary: This study aimed to investigate the microenvironment and systemic participation of oxidative stress (OS) and inflammatory markers in patients with papillary thyroid carcinoma (PTC) and Hashimoto's thyroiditis (HT). The results showed a more pronounced presence of OS and a greater activity of cell proliferation and angiogenesis markers in the PTC group compared to the PTC + HT group.
