Summary: Since the 1940s, there have been ongoing discussions about the benefits and risks of adding fluoride to drinking water. A recent review focused on assessing the risk of current exposure levels in Europe to human health. Despite inconsistent data, the evidence does not support the idea that fluoride should be considered a human developmental neurotoxicant at current exposure levels in European countries.

Summary: After the ingestion of nitrate/nitrite and acetaldehyde/ethanol in diet, sustained exposure to nitrite and acetaldehyde may result in combination effects. These effects could affect the upper gastrointestinal tract locally and have systemic effects on the formation of N-nitroso compounds (NOC). Salivary concentrations of nitrate, nitrite, and acetaldehyde increase after ingestion, absorption, and distribution, reflecting their plasma kinetics and secretion through the salivary glands and microbial/enzymatic metabolism in the oral cavity. Combination effects in the oral cavity and upper digestive tract have not been extensively studied. This Guest Editorial reviews the evidence on exposure levels and biokinetics of nitrate/nitrite/NOx, NOC, and acetaldehyde, and identifies knowledge gaps on combination effects. Further research is needed to address these unresolved issues.

A healthy lifestyle during adolescence was inversely associated with fatty liver indices in early adulthood: findings from the DONALD cohort study

Summary: A healthy lifestyle during adolescence is associated with a lower risk of non-alcoholic fatty liver disease (NAFLD) in early adulthood. Adherence to a hypothesis-based lifestyle score, including dietary intake, physical activity, sedentary behavior, sleep duration, and BMI, is inversely related to fatty liver indices. This association is more prominent in men.

Summary: This study aimed to investigate the feasibility, nutritional value, sustainability, and health effects of the EAT-Lancet reference diet (ELR-diet). The findings showed that adherence to the ELR-diet was associated with favorable nutritional characteristics and reduced environmental impact. It also had a positive effect on anthropometric markers, but no significant impact on cardiometabolic risk markers.

Summary: Western diets have significant impacts on the environment and human health. European countries are taking steps to promote sustainable food production and consumption. However, the evaluation of diet-related human health and animal welfare impacts in life cycle assessment (LCA) is often insufficient. This study proposes integrating additional indicators into LCA to assess the sustainability of diets using the One Health approach, which considers interconnected health issues between humans, animals, and the environment.
