Summary: Colloidal nanoparticles in tea infusion play an important role in the formation of tea cream. The study found that the rate of aggregation of green tea nanoparticles increases with decreasing pH values, and different metal ions have different effects on the nanoparticles. In addition, low temperature indirectly promotes the aggregation of nanoparticles. Under low temperature, the combination of epigallocatechin gallate and caffeine weakens the stability of nanoparticles.

Summary: Painful crises in sickle cell disease (SCD) are associated with increased plasma cytokines levels, including endothelin-1 (ET-1). This study found that ET-1 can increase Na+/Mg2+ exchanger (NME) activity in sickle red cells, leading to potassium loss, dehydration, and sickling. However, deoxygenation of sickle red cells decreased NME activity and caused cellular dehydration, which could be reversed by NME inhibitor, imipramine. Pre-incubation with ET-1 type B receptor blocker, BQ788, significantly blocked the increased NME activity in sickle red cells.

Summary: This study investigated the effects of green tea extract (GTE) on heat-induced milk protein interactions and enzymatic coagulation of milk. GTE had a significant influence on the renneting process, particularly for heat-treated samples. The enzymatic phase of rennet coagulation was negatively affected by GTE, leading to lower κ-casein hydrolysis in intense heat-treated samples. Gel characteristics of raw milk were unaffected by GTE, but mild heat-treated samples with GTE exhibited decreased gel firmness and increased water holding capacity compared to control samples. Model studies using purified β-lactoglobulin A and κ-casein showed that GTE significantly impacted the interactions between denatured β-lactoglobulin A and κ-casein. Heat-induced large aggregate/complex formation between β-lactoglobulin A and κ-casein in milk samples was not significantly affected, emphasizing the importance of the reaction medium. The presence of casein micelles in milk, which are strong candidates for phenolic binding, may ultimately impact protein-protein interactions.
