Summary: In recent years, there has been an increasing interest in barbecues and outdoor cooking in high-income countries, especially in Europe and North America. Italy is a major consumer and importer of charcoal in Europe. However, the analysis of the quality of charcoal available on the market is not well-performed. This research aimed to analyze the energy properties of commonly available charcoal in Italy. The results showed significant variability in the parameters of charcoal both between different groups and within the same group.
